Pat's broccoli and chicken stir-fry

Cooked broccoli makes the Neelys' recipe come together in a snap
- 2 tablespoons soy sauce
- 1 tablespoon orange juice
- 1 tablespoon light brown sugar
- 1 tablespoon rice wine vinegar
- 1/2 tablespoon cornstarch
- 1/2 tablespoon sesame oil
- 1/2 to 1 teaspoon red pepper flakes, or more if desired
- 1 tablespoon peanut oil, plus more as needed
- 1 pound boneless, skinless chicken thighs, cut into 1/2-inch pieces
- 2 tablespoons peeled and chopped fresh ginger
- 4 cloves garlic, minced
- 4 green onions, sliced
Sonoma Chicken Salad

In a bowl, combine mayonnaise, vinegar, honey, poppy seeds, salt and pepper
- Dressing
- 1 cup mayonnaise
- 4 teaspoons apple cider vinegar
- 5 teaspoons honey
- 2 teaspoons poppy seeds
- Salt and freshly ground pepper to taste
- Salad
- 2 pounds boneless, skinless chicken breasts
- 3/4 cup pecan pieces, toasted
- 2 cups red seedless grapes
- 3 stalks celery, thinly sliced
Pizza Dough

Heather's pizza dough for 3 small pizzas
- 1 pkg active dry yeast
- 1 tsp sugar
- 1 C warm water
- 1 tsp salt
- 2 Tbs olive oil
- 3 C flour
Omi's Stollen

Preheat oven to 350 Make a dough from first stage ingredients: put flour in large container and make a dent
- Stage 1:
- 5 lb flour
- 4 pkg yeast
- 1 cup warm water
- 3 cups scald milk
- Stage 2:
- 2 1/8 cup melted margarine
- 1 1/2 cup sugar
- 3 tsp salt
- 4 eggs
- 1 lb currents
- 1 lbs raisins
- 1/2 lb citron
- 1/2 lb almonds (fine)
- butter
- confectioners sugar
Mexican Creamy Kale Salad

Add Salad ingredients to a large bowl
- Dressing:
- 4 cups baby or full-grown kale (stalks removed & coarsely chopped), packed
- 14 oz can black beans, drained and rinsed (I used my cooked beans)
- 1 cup corn (thaw if using frozen)
- 2 large bell peppers (any colour), finely chopped
- 1 + 1/2 large avocado, finely chopped
- 1 large tomato, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup cilantro, finely chopped
- 1 tbsp jalapeño peppers, seeded & minced
- 1/2 large avocado
- 1/2 cup warm water
- 1/2 lime, juice of
- 1 tsp cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
Green Rice

- 2 eggs beaten
- 1/4 C vegetable oil
- 2 C cooked rice
- 2 C grated cheddar cheese
- 1/2 C chopped parsley (or cilantro)
- 1 medium onion, chopped
- 1 clove garlic (or more)
- 1 C milk
- salt
- pepper
Acorn Squash with couscous filling

Preheat oven to 350 degrees F (175 degrees C)
- 2 tablespoons brown sugar
- 1 tablespoon butter, melted
- 2 large acorn squash, halved and seeded
- 2 tablespoons olive oil
- 2 cloves garlic, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 cup garbanzo beans, drained
- 1/2 cup raisins
- 1 1/2 tablespoons ground cumin
- salt and pepper to taste
- 1 (14 ounce) can chicken broth
- 1 cup uncooked couscous
Rice with Mango and Coconut Milk

In a large sauce pan, heat oil over med high heat
- 1 T olive oil
- 1 1/2 C long grain rice
- 1 (14oz) can unsweetened coconut milk
- 2/3 C water
- 1 t salt
- 1 large ripe mango, peeled and cubed
Linguini with shrimp, artichokes, and crispy bread crumbs

- 3/4 pound linguine
- 3 tablespoons olive oil
- 1/2 cup panko bread crumbs
- kosher salt and black pepper
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 pound peeled and deveined large shrimp
- 12 ounces marinated artichoke hearts, drained and halved (1 1/2 cups)
- 1/4 to 1/2 teaspoon crushed red pepper
Pineapple Cheese Ball

- 2 8oz pkgs cream cheese, softened
- 1 20oz can crushed pineapple, well drained
- 2 C chopped pecans
- 1/4 C green pepper, chopped fine
- 2 Tbs onion, chopped fine
- 1 Tbs seasoned salt
- 1 Tbs (or more) sugar
- 1 Bunch parsley, chopped
