Coconut Milk and Mangos Rice

- Ingredients
- 1 tablespoon olive oil
- 1 1/2 cups long-grain rice
- 1 (14-ounce) can unsweetened coconut milk
- 2/3 cup water
- 1 teaspoon salt
- 1 large ripe mango, peeled and cubed
Rosemary Roasted Potatoes

Preheat the oven to 400 degrees F
- 1 1/2 * 1 1/2 pounds small red or white-skinned potatoes (or a mixture)
- 1/8 * 1/8 cup good olive oil
- 3/4 * 3/4 teaspoon kosher salt
- 1/2 * 1/2 teaspoon freshly ground black pepper
- 1 * 1 tablespoons minced garlic (3 cloves)
- 2 * 2 tablespoons minced fresh rosemary leaves
10 Layer Roasted Veggie Salad

Pretty and delicious… Can grill veggies for a great flavor!
- Dressing:
- 1/4 C extra virgin olive oil
- salt and pepper
- 4 C frozen corn
- 1 red onion, sliced in rings
- 1 med zucchini, sliced at an angle
- 1 large red or yellow bell pepper, halved and sliced in rings
- 10-15 spears asparagus
- 1 can black beans, rinsed and drained
- 1 head romaine lettuces, chopped
- 2 ripe avocados, diced and sprinkled w/ lemon juice
- 1 C crumbled feta
- 1/3 C toasted slivered almonds
- 6 T extra virgin olive oil
- 2 T lemon juice
- zest of 1 lemon
- 1 t honey
- 2 T chopped cilantro
- 1 clove garlic, crushed
- 1/2 t cumin
- 1/2 t coriander
Uncle Steves famous potato salad

- 6 large new potatoes (microwave and cool, bite size)
- 12 eggs
- 3/4 C cilantro (stems and few leaves chopped)
- 1/4 C kalamata olives
- 1/4 C green olives
- 1/4 C roasted garlic
- small jalapeno, finely chopped
- 1/2 C green onions
- celery, finely chopped
- Mayo
- Spike seasoning (Fred Meyer)
Summer Rolls

soften rice paper in warm water and place between paper towels
- Dipping Sauce:
- 1 pkg Vietnamese rice paper wrappers (banh trang)
- 8 oz rice sticks (long rice type rice noodles)
- 1 small bunch basil
- 1 small bunch mint
- 1 small bunch chinese parsley or cilantro
- 1 pkg (12oz) Taro-brand Chop Suey Mix
- 1 pkg (20oz) block firm tofu cut into 1/2 inch strips
- 1/2 cup reduced fat peanut butter
- 4 tsp grated fresh ginger
- 8 cloves garlic, minced
- 8 green onion stalkes, cut into 1/4" pieces
- 2 tbsp vegetable broth
- 3/4 cup soy sauce
- 1/2 cup rice wine vinegar
- 1/2 cup brown rice syrup
- 3/4 cup Chinese parsley or cilantro, chopped.
- Hot sauce to taste
Mushroom and Potato Au Gratin

1. Preheat ove to 425. Lightly grease a baking dish
- 2 Tbsp olive oil
- 10 medium sized mushrooms (1 1/2cups), chopped
- 5 shallots, chopped
- salt and pepper
- 5 russet potatoes, cleaned and sliced 1/4 in thick or thinner
- 16 oz (2cups) cheddar
- 1 bunch of scallions (green and white parts), chopped
Mama Burritos

Combine all ingredients except tortillas in a large skillet
- 20 flour tortillas, warmed
- 1 can refried beans
- 1 pkg frozen spinach
- 1 lb hamburger
- 1 lb sausage
- 3 green chile peppers
- 1 small can tomato sauce
- 1 chopped onion
- spice with cumin, cayenne pepper, etc to taste
- Top with cheddar cheese, sour cream, tomatoes, lettuce, onions and salsa
Black Bean Salad with Corn, Red Peppers, Avocado & Lime-Cilantro Vinaigrette

Serves 6
- 2 15-ounce cans black beans, rinsed and drained
- 3 ears fresh cooked corn, kernels cut off the cob
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 2 tablespoons minced shallots, from one medium shallot
- 2 teaspoons salt
- 1/4 teaspoon cayenne pepper
- 2 tablespoons sugar
- 9 tablespoons extra virgin olive oil, best quality such as Colavita
- 1 teaspoon lime zest (be sure to zest limes before juicing them)
- 6 tablespoons fresh lime juice
- 1/2 cup chopped fresh cilantro, plus more for garnish
- 2 Hass avocados, chopped
Classic Chicken and Wild Rice Casserole

- 1/2 cup natural wild rice
- Fine sea salt
- 1 bay leaf
- 6 tablespoons salted butter, plus more for the baking dish
- 2 leeks, white and light green parts, diced
- 3 stalks celery, diced
- Freshly ground black pepper
- 3 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 2/3 cup heavy cream
- 3/4 cup low-sodium chicken stock
- 3/4 teaspoon dried thyme (or 1 1/2 teaspoons fresh)
- 1/4 teaspoon grated nutmeg
- 2 cups roughly chopped cooked chicken
- 4 ounces aged Gouda or aged cheddar cheese, grated (about 1 1/2 cups)
- 2 cups coarsely ground buttery crackers (such as Ritz or Club; about 2 sleeves)
- 2 tablespoons extra-virgin olive oil
