Saute garlic and onion in oil in saucepan
- 1 Yellow Zucchini, chopped
- 3-4 Large Carrots, chopped
- 1 cup Uncooked Brown Rice
- 1 × 15 oz can Diced Tomatoes, undrained
- 1/2 Small Cauliflower, chopped
- 1/2 cup Diced Onions
- 1-2 Tbsp Olive Oil
- 1 tsp Minced Garlic
- 1 × 49 1/2 oz can Chicken Broth
- 1-2 tsp Oregano
- 1-2 tsp Italian Seasoning
Roasted brisket with parsley, mint, thyme

Preheat oven to 350. Season brisket all over with salt and pepper
- 1 4 lb brisket
- salt & pepper to taste
- 3/4 cup roughly chopped fresh parsley
- 1/2 /cup roughly chopped fresh mint
- 2 TBS roughly chopped fresh thyme
- 2 TBS red wine vinegar
- 1 tsp red pepper flakes (optional)
- 6 cloves garlic
- 1 cup roughly chopped yellow onion
- 2 cups low sodium chicken broth

- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter, chilled, cut up
- 2/3 cup buttermilk
- 2 teaspoons vanilla extract
- 1 egg, beaten
- 1 cup fresh blueberries
- TOPPING
- 2 tablespoons coarsely chopped almonds
- 2 tablespoons all-purpose flour
- 2 tablespoons sugar

- 1/2 teaspoon bottled hot pepper sauce
- 1/8 teaspoon ground black pepper
- 1 14-1/2 ounce can diced tomatoes, undrained
Red & Green Enchilada Casserole

Grease a 9x13 pan. Line the bottom with a double layer of tortillas
- Ingredients
- 8 oz. sour cream
- 1 can diced green chilies
- 1 can EACH Green Chili and Red Enchilada sauce
- 2 lbs. hamburger
- 1/2 C. water
- 1 diced onion
- 16 oz. shredded Mexican cheese
- Jalepenos to taste
- 1 pkg. corn tortillas
- 1 pkg. taco seasoning
- Directions
- Mix sour cream and green chilies in a small bowl. Brown hamburger with onion and water. Add taco seasoning.
Black Bean Dip & Bacon

- 1/4 sour cream
- 1 tablespoon sugar
