- 3 cups mashed sweet potatoes
- 1/2 cup sugar
- 2 beaten eggs
- 1/4 cup margarine, melted
- 1/2 cup milk
- 1 1/2 teaspoons vanilla
"Healthified" Chicken Tortilla Casserole

Directions 1. Heat oven to 350 degrees F
- 1 can (10.75 oz) 98% fat-free, 45% less-sodium, condensed cream of chicken soup
- 1 can (4.5 oz) chopped green chiles
- 1 container (8 oz) fat-free sour cream
- 1/2 cup fat-free (skim) milk
- 2 1/2 cups shredded cooked chicken breast
- 8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
- 1 medium green bell pepper, chopped (1 cup)
- 1 large tomato, chopped (1 cup)
- 1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)

- There are so many things I love about homemade granola. I love the way it fills the kitchen with a warm and toasty aroma. I love that you can enjoy it on it’s own, stirred into yogurt, or in a bowl with milk as your morning cereal.
- to have been making the same granola for years (talked about it on a previous blog, here) and I am completely in love with it, but this time around I wanted to simplify the recipe and lighten it up a bit.
- Let’s start with the grocery list…
- 1 1. 1. Rolled oats
- 2 2. 2. Dried blueberries
- 3 3. 3. Chopped walnuts
- 4 4. 4. I Can’t Believe It’s Not Butter
- 5 5. 5. Agave nectar
- ….and assemble all the tools you will need!
- 1 1. 1. Large roasting pan
- 2 2. 2. Microwave safe bowl
- 3 3. 1 1/4 1 cup and 1/4 cup measure
- 4 4. 1 1 tablespoon measure
- 5 5. 5. Spatula

- LIGHT AND LIVELY BLUEBERRY GRANOLA
- 1 3/4 1 3/4 3/4 cups Rolled Oats
- 1 1/4 1 1/4 1/4 cups chopped walnuts
- 6 6 6 tablespoons light Agave Nectar
- 6 6 6 tablespoons I Can’t Believe It’s Not Butter spread, melted
- 3/4 3/4 3/4 cup dried blueberries
- 1 1. to 325 Preheat oven to 325 degrees F. Mix together rolled oats, walnuts, agave nectar, and melted spread and spread on a large roasting pan.
- 2 2. 30 35 10 5 to – 35 minutes, stirring every 10 minutes. In the last 5 minutes of baking, stir in dried blueberries. The granola is done when it is golden and crunchy. Allow to cool before serving.
- Pecans, Almonds or your favorite nut instead of walnuts
- Maple syrup instead of agave nectar
- Butter or margarine instead of spread
- Raisins, dried cranberries, banana chips or your favorite dried fruit.
- Optional additions:
- Sunflower or flax seeds
- Cinnamon
- Serving Serving suggestions: Stir in with your favorite yogurt and top with fresh fruit.
- Enjoy homemade cereal with milk and a spoon!
- to granola will keep in an airtight container for up to two weeks. Store in a cool, dry place.

- 1 (170 g) packages dried sweetened cranberries
- 1 (250 g) containers cream cheese spread
- 1 cup crumbled feta cheese
- 1/4 cup chopped green onion
- 4 large flour tortillas or 4 large wheat flour tortillas or 4 large spinach tortillas

- 4 tomatoes, sliced
- 2 avocados, peeled, seeded and sliced
- 1 - 2 C. Mozzarella cheese, shredded
- 1/2 C. olive oil
- 1/2 C. red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp. Marjoram
- 1/2 tsp. dried dill
- 1/2 tsp. dried oregano
- Salt and pepper to taste

- 2/3 C. vinegar
- 1/4 C. lemon/lime soda
- 2-3 Tbs. minced garlic
- 2 Tbs. soy sauce
- 1 tsp. ground black pepper

- 8 oz. box spaghetti
- 1 jar of your favorite spaghetti sauce
- 1 pkg. Mild Italian sausage
- 1 lg. pkg. shredded Mozzarella cheese
- 1 green pepper diced and sautéed
- 1 medium onion diced and sautéed
- 2 tsp. oregano
