- ◦3/4 cup all-purpose flour
- ◦1/2 teaspoon salt
- ◦1/4 teaspoon freshly ground black pepper
- ◦2 tablespoons butter
- ◦1 tablespoon olive oil
- ◦1/2 medium onion, chopped
- ◦2 cloves garlic, very finely chopped
- ◦8 ounces white button mushrooms, sliced
- ◦1/2 teaspoon Worcestershire sauce
- ◦1/8 teaspoon cayenne
- ◦2/3 cup Irish whiskey
- ◦1/2 cup heavy cream
- ◦2 tablespoons freshly squeezed lemon juice
- ◦1/3 cup parsley, chopped
- ◦Buttered egg noodles or long grain rice
Lemon Chicken with Green Beans and Mushrooms

Whisk broth, lemon juice, wine, flour, herbes de Provence, salt and pepper in a medium bowl
- 1 cup reduced-sodium vegetable or chicken broth
- 3 tablespoons lemon juice
- 3 tablespoons white wine or dry vermouth
- 1 tablespoon all-purpose flour
- 1/2 teaspoon herbes de Provence
- 1/2 teaspoon coarse salt
- 1/8 teaspoon freshly ground black pepper
- 4 (4 to 5 ounce) boneless, skinless chicken breasts
- 2 tablespoons dry breadcrumbs
- 2 tablespoons extra virgin olive oil
- 1 pound green beans, trimmed and diagonally cut in half (about 4 cups)
- 1/2 pound mushrooms, halved or quartered (about 3 cups)
Chargrilled chicken with orange, asparagus and beans

You'll get plenty of protein and loads of fibre from this simple and super healthy chargrilled chicken salad!
- 2 large (about 500g) single chicken breast fillets
- 1 tsp ground cinnamon
- 80 ml (1/3 cup) fresh orange juice
- 2 tsp honey
- 2 tsp olive oil
- 2 bunches asparagus, woody ends trimmed, halved diagonally
- 150 g baby green beans, topped
- 2 tsp white wine vinegar
- 1 x 400g can butter beans, rinsed, drained
- 1 orange, segmented
- 1/3 cup fresh continental parsley leaves
Smoke-Roasted Grilled Rack of Lamb

Ask your butcher to French and trim the rack of excess fat
- 2 tb Worcestershire Sauce
- 1 pn Kosher salt
- 1/4 c Dry Red Wine
- 2 Lamb racks; frenched
- 1/2 ts Cracked black pepper
- 1 ts basil; Ground
- 1/4 c Balsamic vinegar
- Zest of 1 lemon
- 1/4 c Dijon mustard
- 1/2 ts thyme; Ground
- 2 lg cloves garlic; minced

Cuban Ropa Vieja - Crock Pot (Oamc)

A slow cooked Cuban "Beef Stew"
- 2 lbs beef flank steak
- 1 tablespoon vegetable oil
- 1 cup beef broth
- 1 (8 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 1 small onion, sliced
- 1 green bell pepper, seeded and sliced into strips
- 2 garlic cloves, chopped

- 1/4 c brown sugar, firmly packed
- 1/4 tsp ground cinnamon
- 1 red delicious apple, finely chopped (about 1 cup)
- 1 macintosh or fuji apple, finely chopped (about 1 cup)
- 1/2 c walnuts or pecans, coarsely chopped
- 1 pkg (8 oz) cream cheese, softened
- 1 1/2 c shredded sharp cheddar cheese
- 1/2 c sour cream

We used Mahi Mahi and cooked it with equal parts soy sauce and basalmic vinegar
- 60 ml (1/4 cup) fresh lemon juice
- 60 ml (1/4 cup) olive oil
- 1/2 tsp dried chilli flakes
- 2 garlic cloves, crushed
- 500 g dried angel-hair pasta
- 1 tbs finely grated lemon rind
- 2 bunches arugula, ends trimmed, washed, dried, thinly shredded
- 2 x 150g pkts smoked trout portions, skin removed, flaked
- 1/4 cup chopped fresh continental parsley
- Chopped fresh continental parsley, extra, to serve
