Balsamic Chicken and Mushrooms

This is a quick, easy, and elegant WW recipe that is suitable for entertaining
- 2 teaspoons vegetable oil
- 3 tablespoons balsamic vinegar
- 2 teaspoons Dijon mustard
- 1 clove garlic, minced (or more!)
- 4 (4 ounce) boneless skinless chicken breasts, pounded to 1/4 inch thickness
- 2 cups small mushrooms, halved,or quartered if using larger mushrooms
- 1/3 cup chicken broth or 1/3 cup white wine
- 1/4 teaspoon dried thyme leaves, crumbled
Roast Pork with Honey and Sage

Preheat oven to 400F. Combine garlic powder, salt and pepper
- 1 teaspoon garlic powder
- 2 teaspoons coarse salt
- 1 teaspoon ground black pepper
- 2 1/2 to 3 pounds boneless pork loin
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced fresh sage or 1 teaspoon dried
Pasta Dinner Bowl

- 1 lb. ground turkey breast
- (or 1 lb. skinless chicken strips)
- 1 tsp. garlic powder
- 1 bag whole wheat rotini pasta
- 2 cans red kidney beans
- (drained and rinsed)
- Small can sliced black olives, drained
- 1 cup fresh mushrooms, sliced
- (or 2 small cans sliced mushrooms)
- Dressing
- 1 tsp. Dijon mustard
- 4 Tbsp. Balsamic Vinegar
- 4 Tbsp. Olive Oil
- 2 tsp. minced garlic
Butternut Squash-White Bean Stew

Heat oil in a Dutch oven over medium-high heat
- 2 tablespoons olive oil
- 1 cup slivered onion
- 3/4 cup thinly sliced celery
- 3 cups mushrooms, halved
- 4 cups cubed, peeled butternut squash
- 1 -- (14-ounce) can diced fire-roasted tomatoes
- 1 clove garlic, pressed
- 2 cups water
- 2 tablespoons tomato paste
- 3/4 teaspoon dried rosemary, crumbled
- 1/2 teaspoon coarse salt
- 1/8 teaspoon freshly ground black pepper
- 2 -- (15-ounce) cans Great Northern beans, rinsed and drained -- Chopped fresh flat-leaf parsley (optional)

- 2 tablespoons grated Parmesan cheese
- 1 envelope ranch salad dressing mix, divided
- 1 cup mayonnaise
- 1 cup 2% milk
- 1/4 cup crumbled blue cheese, optional
- 1 1/4 cups finely chopped cooked chicken breast

Ground Beef and Mushroom Carbonara is easy to make and a family favorite
- 12 ounce package uncooked spaghetti
- 4 slices bacon
- 1/2 pound lean ground beef, at least 80% lean
- 1 (8 ounce) package sliced fresh mushrooms, about 3 cups
- 1 small onion, chopped, about 1/4 cup
- 4 cloves garlic, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup whipping cream
- 3 pasteurized eggs, beaten
