Simple Caribbean Jerk Chicken

I like jerk chicken but often don't have all the exotic ingredients
- 1 envelope Italian salad dressing mix
- 2 tablespoons brown sugar
- 2 tablespoons oil
- 2 tablespoons soy sauce
- 1 teaspoon cinnamon
- 1 teaspoon thyme
- 1/2 teaspoon ground red pepper
- 2 1/2 lbs chicken pieces
Blueberry Sauce

- 1/4 cup water
- 1 cup orange juice
- 3/4 cup white sugar
- 1/4 cup cold water
- 3 tablespoons cornstarch
- 1/2 teaspoon almond extract
- 1/8 teaspoon ground cinnamon
Grilled Balsamic-Garlic Crusted Pork Tenderloin

- 2 tablespoons balsamic vinegar
- 2 1/2 teaspoons coarse salt
- 1/2 teaspoon freshly ground pepper

- 2 tablespoons canola oil (if preparing in oven)
Chef John's Mushroom Gravy

Heat butter over medium heat in a saucepan until it foams
- 1/4 cup butter
- 1 (16 ounce) package sliced mushrooms
- salt to taste
- 1/4 cup all-purpose flour, or as needed
- 1 quart beef stock
- 1 pinch ground black pepper to taste
- fresh thyme leaves, to taste (optional)

Using scissors, clip the leeks’ dark outer leaves
- 2 generous pounds leeks
- 3 tablespoons extra-virgin olive oil
- Salt and ground black pepper
- 1/2 cup each: heavy cream and grated Gruyere cheese
- 1 tablespoon each: chopped fresh dill and parsley
- 4 slices thick-cut bacon, cut into small dice

Flank Steak: Combine all ingredients in a zip-top plastic bag
- Flank Steak:
- 2 pounds flank steak, about 1 1/2 inches thick
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon coarse salt
- 1/2 teaspoon freshly ground black pepper
- Garlic cloves
- Garlic and Chive Butter:
- 1 stick salted butter, room temperature
- Finely grated rind of 1/2 lemon
- 2 garlic cloves, finely minced
- 2 tablespoons finely chopped chives
Tangy Cucumber Salad

- 3 small English cucumbers
- 1 tsp Kosher salt
- 1/2 small red onion, thinly sliced
