Braised Radishes

- 2 bunches radishes (about 1 pound), preferably icicle, tops trimmed to 1 inch above roots
- 3 tablespoons unsalted butter
- 2 tablespoons sugar
- 1/2 teaspoon kosher salt

Moroccan Fish Tagine

"This wonderful herby fish stew tastes as good as it looks, and then some
- For the Sharmoola/Chermoola:
- 600 g of meaty fish (cod, grouper, ling, shark, snapper, monkfish,. . .) cut into chunks
- 3 tomatoes, peeled, deseeded and cut into strips
- 2 medium potatoes, peeled and sliced
- 1 large onion, sliced into rings
- 1 green capsicum (green pepper), sliced into rings
- 1 carrot cut into matchsticks
- 2 tbsp chopped coriander (cilantro)
- 1 tbsp olive oil
- Salt
- Pepper
- 1/2 cup chopped coriander
- 1/2 cup chopped parsley
- 6 garlic cloves, finely chopped
- 1/2 cup (125 ml) olive oil
- Juice of 1/2 lemon
- 1 tsp saltd
- 1 tsp hot paprika
- 1/2 tsp cumin powder
- 1/4 tsp saffron powder
Artichoke and Tomato Panzanella

Place a grill pan over medium-high heat or preheat a gas or charcoal grill
- 3 cups 1 1/2-inch-cubed whole-wheat bread
- One 10-ounce package frozen artichoke hearts, thawed (about 2 cups)
- 2/3 cup extra-virgin olive oil, plus more for drizzling
- 1/2 teaspoon salt, plus more for seasoning
- 1/2 teaspoon freshly ground black pepper, plus more for seasoning
- 3 large red tomatoes, cut into wedges (about 2 pounds)
- 1 cup pitted black olives, halved
- 3/4 cup chopped fresh basil leaves (about 1 bunch)
- 1/4 cup white wine vinegar
Marinated Chicken Breasts

Directions Put the vinegar, herbs, mustard, powders if using and oil in a large re-sealable plastic bag
- 1 to 2 tablespoons vinegar, like cider, balsamic, or red wine
- 2 to 3 teaspoons dried herbs, like thyme, oregano, rosemary, or crumbled bay leaf
- 1 to 2 tablespoons mustard, whole grain or Dijon
- 1 to 2 teaspoon garlic or onion powder, optional
- 1/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 4 boneless, skinless chicken breast, each about 6 ounces
Curried Rice Salad

Golden rice salad with a touch of spice
- 1 1/2 cups raw rice
- 4 chicken boullion cubes
- 3 cups salted water
- 1 tablespoons curry powder
- 1/4 cup vegetable oil
- 2 tablespoons vinegar
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 2 tablespoons prepared mustard
- 1 cup ripe olives, sliced
- 2 chopped dill pickles
- 1/4 cup chopped pimiento
- 1 small onion minced
- 1/2 cup mayonnaise
- 2 hard boild eggs, diced
- 1 1/2 cups sliced celery
Cuban Meatloaf

1.Preheat oven to 425°F. Chop oregano; place in medium bowl with garlic and olives
- 1 1/2 teaspoons fresh oregano, coarsely chopped
- 1 tablespoon minced garlic
- 1/2 cup sliced, stuffed green olives
- 1 lb lean ground beef (7% fat)
- 2 (4.25-oz) cans deviled ham (or cooked ham)
- 1 cup cracker meal, divided
- 3 large eggs (or 3/4 cup egg substitute), divided
- 1/4 cup presliced green onions
- 1 1/2 teaspoons ground cumin
- 3 hard boiled eggs
- 1 cup sofrito
- 1/2 cup water
Lemon Soy Steak

Found online. Can't remember having tried making it
- 2 medium lemons
- 2 T soy sauce
- 1 T olive oil
- 1 garlic clove, crushed
- 1/4 t ground black pepper
- 1/4 t ground red pepper (cayenne)
- 1 boneless beef top sirloin steak, 1 1/4" thick (about 1 1/2 lbs) *
- If using chuck steak, tenderize by marinating from 4 hours to overnight.
Sweet Hot Mustard Chicken Wings

Preheat oven to 450 degrees F (230 degrees C)
- 2 pounds chicken wings, separated at joints, tips discarded
- salt to taste
- 2 tablespoons Dijon mustard
- 2 tablespoons prepared yellow mustard
- 3 tablespoons honey
- 2 teaspoons cider vinegar
- salt and ground black pepper to taste
- 1 teaspoon hot pepper sauce
SMOKE-ROASTED APPLES

Using a small melon baller, core the apples from the top
- Other Items Needed:
- 6 sweet crisp apples (ideally, Fugi apples)
- 3 tablespoons apricot jam
- 3 tablespoons whipped cream cheese
- 3 tablespoons dark brown sugar
- 3 tablespoons unsalted butter
- 1-1/2 cups apple or hickory chips, soaked in water to cover for 1 hour, then drained;
- Grill rings (optional)
