Pumpkin Chocolate Chip Bars

Preheat oven to 350. Line bottom and side of 13x9" pan with foil, leaving an overhang on all sides
- 2 c all-purpose flour (could use white whole wheat here)
- 1 & 1/2 tsp cinnamon
- 3/4 tsp ginger
- 1/2 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp cloves
- 1 tsp baking soda
- 3/4 tsp coarse salt
- 1 c unsalted butter, room temp
- 1 & 1/4 c sugar
- 1 egg
- 2 tsp vanilla
- 1 c pumpkin puree
- 12 oz chocolate chips
CREMA DE APIO CON PAPA

Limpiar las ramas de apio y picar con todas las hojas
- 3 onzas de apio, (7 ramas),
- 3 dientes de ajo,
- 2 onzas de mantequilla,
- 2 litros de caldo,
- 1/2 libra de papas,

Melt butter in a 1 cup glass measuring cup in microwave oven (about 30 seconds at High)
- 2 tablespoons butter or margarine
- 1 1/4 pounds whitefish fillets,
- cut in serving pieces
- Salt an pepper
- Paprika
CHICKEN AND BROCCOLI CREPES

Prepare Basic Crepes; set aside
- 10 prepared basic crepes (recipe follows)
- ½ cup half-and-half
- ½ cup all purpose flour
- ½ teaspoon garlic salt
- 1 ¼ cups chicken broth
- 2 cups (8 onz.) shredded Wisconsin Cheddar cheese,
- divided.
- ½ cup (2onz.) shredded Wisconsin Monterrey Jack
- cheese
- 1 ½ cups dairy sour cream, divided
- 2 tablespoons diced pimiento
- 1 tablespoon parsley flakes
- 1 teaspoon paprika
- 2 tablespoons butter
- 1 can (4 onz.) sliced mushrooms, drained
- 2 packages (10 onz each) frozen broccoli spears,
- cooked and drained
- 2 cups cubed cooked chicken.

- 4 * 4 (4- to 6-ounce) tilapia fillets
- 8 to 12 * 8 to 12 ounces purple potatoes, peeled and very thinly sliced
- 1 * 1 tablespoon fresh minced rosemary leaves, plus 1 tablespoon
- 2 * 2 tablespoons olive oil
- 2 * 2 tablespoons butter
- 1/2 * 1/2 cup extra-virgin olive oil
- 1/3 * 1/3 cup minced fresh chives
- 1/2 * 1/2 teaspoon salt
- 1/4 * 1/4 teaspoon freshly ground black pepper

- 1/2 cup dry breadcrumbs
- 2 tablespoons finely chopped pecans
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 cup low-fat buttermilk
- 1/2 teaspoon hot sauce
- 3 tablespoons all-purpose flour
- 4 (6-ounce) tilapia or snapper fillets
- 1 tablespoon vegetable oil, divided
- 4 lemon wedges
Fried Mozzarella Sticks

Slice string cheese pieces in half, for a total of 32 pieces
- 16 pieces string cheese removed from wrappers
- 1/2 cup all-purpose Flour
- 2 whole eggs
- 3 tablespoons milk
- 2 cups Panko bread crumbs
- 1 tablespoon dried parsley
- canola oil
- marinara sauce, for dipping
Sweet Potato and Quinoa Salad

If you haven’t already, cook the quinoa or other grain
- 2 1/2 cups cooked quinoa or other small-kernel grain or 1 cup raw
- 1 large or 2 medium (about 1 pound) sweet potatoes
- Salt
- 1 red bell pepper, cored, seeded, and diced
- 1/4 cup minced red onion or shallot
- Freshly ground black pepper
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic, sherry, or red wine vinegar
- 1/4 cup minced fresh chives or parsley leaves

- 4 onzas de choclo tierno,
- 4 onzas de vainitas picadas,
- 1 cebolla blanca picada,
- 4 dientes de ajo,
- 1 ½ litros de agua,
- 1/4 de cucharadita de azúcar,
- sal, pimienta y un poquito de orégano.
