Grate zucchini using the large holes of a cheese grater and place in a large bowl
- 2 medium zucchini, grated
- 2 shallots, finely chopped
- 1/4 cup fresh chives
- 1/4 cup parsley, chopped
- 1 garlic clove, minced
- 2 eggs
- 1/4 cup grated Parmesan cheese
- 6-8 tbsp whole wheat flour
- kosher salt and fresh pepper to taste
- olive oil spray
CHICKEN BREASTS WITH MUSTARD SAUCE

- 4 chicken breast halves, 8-9 onz each, skinned and

- 1 tablespoon unsalted butter

Mocha Choca-Latta

- One 25-calorie packet hot cocoa mix (like Swiss Miss Diet or Nestlé Fat Free)
- 2 tsp. instant coffee granules
- 1 tsp. unsweetened cocoa powder, or more for optional topping
- 1/2 cup light vanilla soymilk, or more for optional frothed topping

If using sour or buttermilk, use 1 teaspoon baking powder and 1/2 teaspoon soda
- 1 egg
- 1 1/4 c. milk
- 2 tbsp. oil
- 1/2 c. whole wheat flour
- 1/2 c. all purpose flour
- 1 tsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. oats (can be thick cut, regular, quick)
Spinach Salad with Ham and Egg

- Coarse salt and ground pepper
- 2 bunches spinach (about 1 pound), trimmed and cut into bite-size pieces

- 6 radishes, thinly sliced
