Papa Garcia's Salsa

Probably a 100 year old recipe, actually taught to Papa by Grandma Genevieve's Mother in the 1940's
- 1 small white onion sliced
- 2 cloves garlic chopped
- 3-4 jalapeños roasted and sliced thin the long way
- 3 to 4 roasted peeled tomatoes, chopped
- cilantro sprigs
- juice of 1/2 lime
- juice of 1/2 lemon
- low sodium chicken broth 'to cut it'
- kosher salt
- fresh course ground black pepper
Nacho Kale Chips

Great taste with cashews and nutritional yeast
- 1 bunch Kale
- 1 cup raw cashews, soaked in water
- 1/3 cup nutritional yeast
- 1/4 to 1/2 cup lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
Pickled Green or Grape Tomatoes

I used my home grown grape tomatoes for this recipe and each bite tastes like you are eating a spoonful of salsa
- 2 pounds green tomatoes (about 4 or 5), thinly sliced or enough grape tomatoes (Green) to fill two jars.
- 1 jalapeño, stems removed, cut in half lengthwise
- 1 teaspoon cumin seeds
- 1 teaspoon peppercorns
- 1 teaspoon celery seed
- 1 teaspoon dill seed
- 2 cloves garlic, minced
- 1 sprig cilantro
- 1 sprig oregano
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon sea salt
- 2 wide-mouth pint canning jars or 1 wide-mouth quart jar, sterilized
- w/ lids and rings.
Richie's 2015 Cayenne Hot Sauce

Fermented pepper sauce, with 100% Cayenne chiles
- 11/2 lbs. cayenne chiles
- 11/2 oz. kosher salt
- 7 oz. filtered water
- 1 T seasoned rice vinegar
- 11/2 T light brown sugar

- 4 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 3 cups coconut milk
- Steamed vegetables of your choice such as broccoli ,asparagus and or julienned carrots
- Kaffir lime leaf, for garnish
- Thai Basil, for garnish
- Serrano peppers, for garnish
- Steamed white rice

- 2 cups water
- 1 1/2 cups Distilled White Vinegar
- 1/2 cup Seasoned Rice Vinegar
- 15 Dried Serrano Peppers
- 5 Dried Jalapeno Peppers
- 2 Cloves Garlic
- 1 t Salt
