- 3(8-ounce) cans3 (8-ounce) cans tomato sauce
- 1/2cup1/2 cup coarsely chopped onion
- 1/2cup1/2 cup chopped parsley
- 55 celery stalks, chopped
- 1bottle1 bottle rose wine
- 10cups10 cups cold water
- 1teaspoon1 teaspoon black pepper
- 2tablespoon2 tablespoon salt
- 1tablespoon1 tablespoon ground allspice
- 1/2teaspoon1/2 teaspoon cumin seeds
- 44 bay leaves
- 1tablespoon1 tablespoon wine vinegar
- 1head1 head green cabbage, cored and quartered
- 11 loaf French bread, cut into 1-inch slices
- 2525 whole fresh mint leaves, with stem-essential

- 1 Rib Eye Steak per person
- Eggs
- Crumbled Goat Cheese
- Parsley
- S & P
- Herbs de Provance
- EVOO
Grandma Pat's Mock Ravioli

Adapted from Mrs. Rastlers Recipe (Russel Field and Susan Helvick's grandmother)
- Meat:
- 1 pound ground beef
- 1 pound ground pork sausage
- 1 chopped onion
- 2 cloves of garlic, finely chopped
- 12-24 inches of fresh rosemary, cut up (stolen from the Brown’s front yard!)
- 1 package frozen, chopped spinach (the square one)
- 3/4 C spinach liquid and water
- 1 can 14oz tomato sauce
- 1/2 6oz can tomato paste
- 1/2 cup bread crumbs (Progresso with Italian seasoning)
- 2 eggs
- 1/2 c fresh parmesan, assiago or romano shredded cheese
- Salt and pepper to taste
- 16 oz of cooked pasta (bow ties)
- sauce:
- In other pan, brown 1/4 of ground beef and 2 Tbsp of sausage. Add 1 minced garlic clove, 1 tsp rosemary, 1 tsp allspice, 3 cans of tomato sauce (6 oz each), 2 cans of water, 1 tsp salt. Bring to boil and simmer 2 hours.
Whole Grain Mustard

Spicy enough that you'd swear there was horseradish in it!
- 1/4 cup brown mustard seeds
- 1/4 cup yellow mustard seeds
- 1/2 cup dry white wine
- 1/2 cup white wine vinegar
- 1/2 teas. Kosher salt
- 1 teas. light brown sugar (or honey)
Panko Crusted Basa

- 1/2 cup melted butter
- 1/2 teaspoon garlic powder
- 2 tablespoons lemon juice
- 1 cup unseasoned panko
- 1 teaspoon Old Bay Seasoning

Beans and Escarole Salad

- 1 t Lemon zest
- Juice of one lemon
- 1 lrg clove garlic minced
- 2 t dijon
- 1/4 C EVOO
- S & P
- pinch of nutmeg
- 1 lg head Escarole, cleaned, dried and chopped
- 1 15oz can Cannellini beans rinsed and drained
UD's Chicken Toscana

BROWN- Chicken w/ onion,garlic in oil from chokes
- 6 Chicken thighs (skinless)or
- 1 whole cut-up chicken
- 1 15oz jar of artichoke hearts
- 8 mushrooms sliced
- 1 bell pepper cut to strips
- 1 onion quartered
- 3/4 cup white wine, 1/4 cup for the chef!
- oil from chokes, or EVOO
- herbs; basil, oregano, rosemary, thyme*
- 2 clove garlic diced
- S & P
- Egg noodles or cooked rice
- 2 T cornstarch
Pork Stew for Rainy Day

Pork and Vegetables in a Hearty Sauce, perfect for a rainy day
- 3 tablespoons all-purpose flour
- 1 teaspoon salt and pepper
- 1 pound pork steak, trimmed, cut into 1-inch pieces, salted and peppered
- 2 tablespoons EVOO
- 2 1/4 cups water
- 3 sliced Slow Roasted Roma Tomatoes
- 2 cups cubed peeled red potatoes
- 2 medium (1 cup) carrots, sliced 1/2-inch
- 1 rib (1/2 cup) celery, sliced
- 2 zucchini's cubed
- 1 medium (1/2 cup) onion, chopped
- 1 T dried oregano leaves
- 1 T dried thyme
- 1 t ground cumin
- 1 t red pepper flakes
- 4 cloves garlic chopped
- 1 bay leaf
- Chopped fresh parsley to garnish
Simple, Fresh Homemade Tomato sauce

Fresh is the key here, best served w/ store bought spinach or other ravioli!!!
- in Food Processer Combine:
- 6-8 home grown tomatoes
- 2 cloves garlic
- S&P
- 1 dried jalapeno, or 1/4 t pepper flakes
- in pan add:
- 1 T pesto
- 1 T butter
Fried Green Tomatoes

- 1 Cup Corn Meal
- 1-2 T Paprika
- 2 lg Eggs - beaten
- 1/2 C Canola oil
