Homemade Mexican Chorizo

Wonderful layers of flavors you cannot get from most commercial Chorizo’s
- 1 pound slow roasted pork, or ground pork
- 6 dried guajillo or ancho chiles
- 1/3 cup apple cider vinegar
- 1/3 medium onion, chopped
- 3 cloves garlic, chopped
- 1/4 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 to 1/2 teaspoon cayenne
- 2 teaspoons salt
- 1 teaspoon black pepper
Cooked Grape Tomatoes with Shallots

- 6 shalltt Quarters
- 1/4 C White Wine
- 2 T Capers

- Rosemary sprigs
- oregano and/or basil
- olive oil
- balsamic vinegar
- Salt and pepper
Grandma Pat's Meatloaf

the one I grew up on
- dick adds:
- 1-1/2 lb gr beef
- 1 sm onion chopped
- 2 eggs
- 1/3 cup milk
- 1/2 c bread crumbs
- 1-1/2 t salt
- 1 t sage
- 1 t poultry seas.
- parsley, oregano, rosemary and cumin seed.
- TOPPING:
- 1/4 C catsup, 3T br sugar, 1t dry mustard
Stuffed Chard (cabbage works also)

Family favorite from Ceil Dyer's 'Wok Cookery'
- 8 large Chard Leaves
- 2 T olive oil
- 2 T minced onion
- 2 cloves garlic minced
- 3/4 lb lean ground beef
- 1/4 lb ground pork or sausage
- 1 t tomato paste
- 1 C beef broth
- 1/2 C fine bread crumbs
- 1 egg slightly beaten
- 1/2 t salt
- 1/2 t coarse gr. Pepper
- 1/2 t Italian herbs
- 1 C Italian tomato sauce

- pepper flakes

Tuscan Chicken a la Ricardo

Had a similar meal in Dunsmuir Ca,circa 1981, went home and created this recipe, a family favorite still in 2012
- 6 Chicken thighs (skinless)or
- 1 whole cut-up chicken
- 1 15oz jar of artichoke hearts **
- 8 mushrooms sliced
- 1 bell pepper cut to strips
- 1 onion quartered
- 3/4 cup white wine, 1/4 cup for the chef!
- oil / vinegar from chokes,
- herbs: basil, oregano, rosemary, thyme*
- 2 clove garlic diced
- S & P
- Cooked Egg noodles or cooked rice
- 2 T cornstarch
Sopa de Molcajete ( A Mexican Soup) aka - Guisado

Wonderful filling Mexican Soup with rich with flavors
- GARNISH:
- 4 chicken legs or thighs
- 8 ounces beef, cut to strips
- 1 thick slice of bacon
- 1 1/2 teaspoon vegetable oil
- 3 cups boiling water
- 2 cubes Knorr beef boulion
- 1 tablespoon Ancho chili powder**
- 1 (15 ounce) can tomato sauce**
- ( ** My version, you may substitute last two ingredients with 2 cups sauce made from dried ancho chilis onions, garlic, cumin and tomato sauce, boiled and blended. See below)
- 1 pound mushrooms, cut in half
- 2 zucchinis, halved and sliced (my version)
- 2 stalks celery, cut on bias (my version)
- 1/2 sweet onion, chopped
- 2 teaspoons garlic, minced
- 1 teaspoon cumin
- 1 teaspoon cocoa powder
- 1/4 teaspoon cidar vinegar
- 1 teaspoon dry sherry
- 1/2 teaspoon butter
- 1/2 teaspoon frank's or Tobasco
- Salt and pepper
- Queso Fresco or Jack cheese, chopped green Onions, Jalepenos, Avocado and dried Oregano.
Buffalo Hot Wings

- 1 Lb cut-up Chicken Wings
- 1/2 Cup Franks Hot Sauce
- 1/2 stick unsalted butter
- 2 cloves garlic minced
- 1/4 tsp Celery Seed
Mango / Kale Salad

- 1 bunch kale, stalks removed and discarded, leaves thinly sliced
- 1 lemon, juiced
- 1/4 cup extra-virgin olive oil, plus extra for drizzling
- Kosher salt
- 2 teaspoons honey
- Freshly ground black pepper
- 1 mango, diced small
- Small handful toasted pepitas (pumpkin seeds)
