7 Layer Dip

Appetizer
- Ingredients:
- 2 cans of bean dip or 1 large can of refried beans
- 3 ripe avocados mashed
- 2 Tbsp. Lemom Juice
- 8 oz sour cream
- ½ cup mayo
- ½ packet taco seasoning
- 1 bunch green onions, grated
- 3 medium tomatoes, chopped
- 2 cans sliced olives
- grated cheddar and jack cheese
- salt & pepper
Hot Artichoke and Spinach Dip

Serve it with raw vegetables such as cucumber slices, carrot sticks and celery
- 1/2 cup light mayonnaise
- 1/2 cup fat-free plain yogurt
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dried, or 3 tablespoons fresh, minced onion
- 1 teaspoon chopped garlic
- 1/2 teaspoon dried basil
- 1/8 teaspoon ground black pepper
- 1 package (10 ounces) frozen chopped spinach, thawed, drained and squeezed
- 1 can (14 ounces) artichoke hearts, drained, rinsed and coarsely chopped
No-Baste, No-Bother Roasted Turkey

Adjust the oven racks so the covered roasting pan fit easily inside
- 1/2 stick salted butter, softened
- One 12-pound turkey, completely thawed and all giblets removed
- 2 tablespoons salt
- 2 teaspoons pepper
- 2 stalks celery, cut in lengths to fit turkey cavity
- 1 medium sweet onion, such as Vidalia, cut in half
- 1 large carrot, cut in lengths to fit the turkey cavity
- 2 cups boiling water
BBQ Chicken Salad

Preheat oven to 350 F and grease a square baking dish
- 4 to 6 grilled chicken breasts, shredded
- 1 (18 ounce) bottle barbecue sauce
- 1 package bacon
- 1 to 2 bags lettuce
- 1 can corn, drained
- 2 tomatoes, chopped
- 1/2 medium red onion, sliced into rings
- 1 to 2 cups shredded mozzarella cheese
Angel Eyes Balls

- 1 large package (7.9 oz) Pill Pockets
- 3 t. vitamins
- 2 T Angel Eyes
- 1 t. molasses
Bisquick Blueberry Scones

Preheat oven to 400 degrees
- For Glaze:
- 3 cups Bisquick
- 2 tbsp. Sugar
- 1 cup fresh or frozen blueberries
- 1/4 cup milk
- 2 eggs
- 1 egg, well beaten
- 2 tbsp. Sugar
Helaine Sokolik Esterson's Kugel

Jewish Holiday or anytime food
- Topping:
- 1 Lb Extra Wide Egg Noodles
- 1 Stick Butter
- 4 Eggs
- 1 pt cottage cheese
- 1 pt sour cream
- 1 Cup sugar
- 2 t. Vanilla
- Can evap milk
- 2 cups graham crackers crumbs
- Mix in 1 tsp cinnamon and 1/2 c sugar
- Add and drizzle 1/2 c butter
Broccoli Salad

Toss the broccoli, raisins and onion in a large bowl
- 5 cups chopped fresh broccoli
- 1/2 cup golden raisins
- 1/4 cup chopped red onion
- 1 cup mayonnaise
- 3 tablespoons cider vinegar
- 2 tablespoons sugar
- 1/2 teaspoon black pepper
- 12 bacon slices, cooked and crumbled
- 3/4 cup sunflower seeds (or other nuts)
Cheese and Onion Pie

Cook's note: You may substitute Swiss and Gruyere cheeses with 10 ounces Monterey Jack cheese
- Pastry:
- 2 cups flour
- 2/3 cup butter
- 1/2 teaspoon salt
- 1 tablespoon sugar
- Filling:
- 5 ounces Swiss cheese, grated
- 5 ounces Gruyere cheese, grated
- 2 tablespoons flour
- 2 large onions, sliced thin
- 4 tablespoons butter
- 1 teaspoon dried basil
- 2 large firm tomatoes, sliced thin
- 2 large eggs
- 3/4 cup cream
- 1/8 teaspoon ground nutmeg
