Chocolate Waldorf Salad

Mix mayonnaise, sugar, raisin paste and orange peel in large bowl
- Chocolate Bliss Waldorf Salad
- 1/4 cup mayonnaise
- 1 tablespoon sugar
- 1 tablespoon raisin paste OR 2 tablespoons raisins
- 1 teaspoon finely grated orange peel
- 2 cups (2 medium) red eating apples, unpeeled and coarsely chopped
- 1/2 cup mandarin orange segments
- 1/2 cup (1 stalk) thin celery slices
- 1/2 cup chopped walnuts
- 1/2 cup Dark Chocolate Chips or Semi-Sweet Chocolate Chips
Rondele Chicken Fettuccine

In deep pot bring broth to a boil over high heat, add chicken
- 28 oz. chicken broth
- 8 oz. boneless chicken breasts (or can used cooked chicken)
- 8 oz. fettuccine, broken in half
- 16 oz. bag frozen broccoli and cauliflower
- 6 oz pkg. garlic and herb cheese (Rondele)
- 1/2 t. salt
- 2 T. grated Parmesan cheese
- 2 T. finely chopped green onions or chives
- Coarsely ground black pepper
Schlemmertopf Roast Chicken

- 1 frying chicken
- 5 tablespoons onions, sliced
- 1 bunch of parsley
- Butter (optional)
- Salt

Italian Chicken and Quinoa Stir Fry

- 1 cup Quinoa cooked with chicken stock per pkg.
- 2 cups chicken broth
- 1 1/2 lbs. chicken breast tenders
- 3 T. Olive Oil
- 1 small onion, thinly sliced
- 1 red and 1 yellow bell pepper thinly sliced
- 5 cloves garlic
- 20 leaves fresh basil, julienned
- grated parmesan cheese
- salt and pepper to taste

Taco Stuffed Peppers

Cut off the top and remove the seeds from each pepper
- 6-8 Medium/Large Bell Peppers - ensure they have a flat base so they will stand up when cooking
- 1 lb Ground Beef
- 1 Medium Yellow Onion - Diced
- 1 Can Black Beans - Drained
- 1 Cup Cooked Brown Rice
- 1 Cup Frozen Corn
- 1 Jar Medium Chunky Salsa
- 1 Packet (about 2 Tbsp.) of Taco Seasoning Mix*
- 1 1/2 - 2 Cups Grated Cheddar/Mexican Blend Cheese
- Optional: Guacamole and Sour Cream to finish
- To make your own Taco Seasoning at home: (note: makes more than needed for this recipe)
- 1 Tbsp. Chili Powder
- 1 1/2 tsp Ground Cumin
- 1 tsp Salt
- 1 tsp Black Pepper

Crust: Line outside of springform pan with aluminum foil, shiny side out
- Crust:
- 1 1/4 cups graham cracker crumbs
- 2 T. sugar
- 2 oz. melted butter
- Filling:
- 6 oz. bittersweet chocolate
- 1/4 cup rum
- 1 lb. cream cheese
- 3/4 cup extra fine sugar
- 1/2 cup sour cream
- 1 T. vanilla
- 4 extra large eggs
Breakfast Potato

Bake potatoes then lay the potato on it's side and carefully cut off the top third of the potatoes
- 4 large potatoes
- 2 T. butter
- 4-6 eggs
- 4-6 strips of bacon, cooked and crumbled
- 8 T. shredded cheddar cheese
- 1 T. fresh parsley, chopped
- salt and pepper to taste

- 2 cups tomato sauce
- 1 1/4 cups brown sugar
- 1 1/4 cups red wine vinegar
- 1/2 cup molasses
- 4 teaspoons hickory-flavored liquid smoke
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon celery seed
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper

- 4 cups water
- 1 cup sugar
