Greek Salad Pasta

Saute onion in 1 T. oil add bag of spinach and wilt about 5 mins
- 1 lb. cooked penne pasta
- 1 bottle TJ's Balsamic Vinagrette
- 1 container cherry tomatoes halved, drizzled with olive oil, sprinkled with salt and pepper and roasted for 15 mins in toaster oven
- 4 oz. Feta Cheese
- 1 can sliced olives
- 1 can artichoke hearts, chopped
- 1 bag baby spinach
- 1/2 red onion, rough chop
- 1 T. olive oil plus more for drizzling
Egg Noodle Lasagna

One pot lasagna using No Yolks egg noodles
- 12 ounces NO YOLKS (prefer Dumplings)
- 1 1/2 tablespoons unsalted margarine
- 1 1/2 tablespoons flour
- 1 cup fat-free half-and-half or milk
- 1/2 teaspoon salt (if desired)
- 1/4 teaspoon pepper
- 1/2 teaspoon crushed dried oregano
- 1 cup reduced-fat ricotta cheese
- 1/2 cup shredded Parmesan cheese
- 1/4 cup liquid egg equivalent
- 1 cup Francesco Rinaldi ToBe Healthy Pasta Sauce (Tomato & Basil)
- 2 cups spinach
- 1/4 cup red onion, diced
- 1/2 cup mushrooms, diced
- 1 cup shredded, reduced-fat mozzarella cheese

Breakfast Biscuit Bake

1. Mix your eggs and milk in a large bowl
- 10 eggs
- 1/2 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind) ***DO NOT COOK FIRST***
- 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 2 cups shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage
- 11 ×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but it might need to bake a little longer)

1. Preheat the oven to 400°F
- 3 chicken sausages (any flavor), thinly sliced
- 1 yellow onion, cut into wedges
- 1 green bell pepper, chopped
- 20 grape tomatoes
- 10 button mushrooms, stems removed
- 2 cloves of crushed garlic
- 5 tbsp olive oil, divided
- 1/4- 1/2 cup whole milk
- 12 oz pasta (bowtie, elbows etc)
- 1/2 cup shredded Mozzarella cheese
- salt and pepper to taste
- Fresh basil for garnish
