Coffee Spumoni Ice Cream

In a double boiler, whip egg yolks, sugar and coffee for 10-15 mins
- 4 egg yolks
- 7 T. sugar
- 6 T. strong coffee
- 2 shots rum
- 1 cup whipping cream
Churros with Chocolate Dipping Sauce

Mix sugar and cinnamon in wide, shallow dish and set aside
- Churros:
- 1/4 C superfine sugar
- 2 t ground cinnamon
- 2/3 C plus 2 T all-purpose flour
- 1 t baking powder
- 1 T olive oil
- 1 C freshly boiled water
- 2 C corn or vegetable oil, for deep frying
- Chocolate Sauce:
- 4 oz. good quality dark chocolate chips (or 1/2 C chips)
- 1-oz. milk chocolate (or 2 T chips)
- 1 T corn syrup
- 2/3 C double cream
Red Velvet Cupcakes (scratch)

Preheat oven to 350 F. Place paper cupcake liners into two or three 12-count muffin pans
- Cupcakes:
- 3 1/2 cups cake flour
- 1/2 cup unsweetened cocoa (not Dutch process)
- 1 1/2 teaspoons salt
- 2 cups canola oil
- 2 1/4 cups granulated sugar
- 3 large eggs
- 6 tablespoons (3 ounces) red food coloring
- 1 1/2 teaspoons vanilla
- 1 1/4 cup buttermilk
- 2 teaspoons baking soda
- 2 1/2 teaspoons white vinegar
- Frosting:
- 2 cups heavy cream, cold
- 24 ounces cream cheese, at room temperature (or 12 ounces cream cheese and 12 ounces mascarpone cheese)
- 1/2 teaspoon vanilla
- 1 1/2 cups confectioners’ sugar, sifted
Pasta al Vodka

Saute pancetta in oil until golden
- 1/4 c EVOO
- 6-8 oz. pancetta, diced
- 1 T finely chopped garlic
- salt and pepper to taste
- 1/2 c chopped scallion
- 2 c coarsely chopped fresh tomatoes, peeled
- 2 oz. Vodka
- 1/2 c grated parmesan cheese
- 6-8 T coarsely chopped basil

- 1 cup mashed potato
- 1 small onion, minced
- 1/2 cup chopped pecans
- 2 lbs lean ground beef
- 1 small can evaporated milk (2/3 cup)
- 1/3 cup water
- 1 egg
- 1 1/2 t. salt
- pepper
- 1/4 t. celery seed
- 1/4 t. oregano
- Topping: optional
- 1 cup mashed potato
- 1 t. chives
- pepper
- paprika
- butter or margarine
Indian Green Beans with Mustard Seed

- 1 pound fresh green beans, trimmed and cut into 1" pieces
- 1/4 cup Vegetable oil
- 1 T. black mustard seed
- 4 cloves garlic, minced
- 1 t. salt
- 1/2 t. white sugar
- ground black pepper to taste
Brazilian Picadillo

Coarsely chop bell pepper
- 1/2 lb. ground beef
- 1 large red bell pepper
- 1/4 C Castelvetrano olives or Spanish olives
- 1 cup Mirapoix
- 1/2 cup of tomato sauce
- 1 T. tomato paste
- 1/4 cup raisins
- 2 T. Parsley chopped
- I bag riced cauliflower
- 1 T. Worcestershire
- 1/2 t. each of paprika, cinnamon and cumin
- 1 T. crushed garlic

- 1 1/2 cups Bisquick
- 1/3 cup unsweetened cocoa powder
- 3 T. sugar
- 2/3 cups milk
- 1 beaten egg
- 1 T. oil
- 1/2 cup blueberry puree
- 1/4 cup spinach puree
- choc. chips- reserve
Ham Bake

- 6 medium potatoes, thinly sliced
- 8-12 oz cooked ham, chop in small pieces
- 1 c chopped onion
- 8 oz shredded cheddar

At medium speed, beat cream cheese with butter
- 1 8oz. pkg cream cheese, softened
- 1/2 c butter, softened
- 1/2 c marshmallow fluff
- 16 oz. powdered sugar
