- Sauce:
- 7 ounces butter
- 5-1/2 ounces (1/2 cup plus
- 2-1/2 tablespoons) sugar
- 5-1/2 ounces (3/4 cup) dark brown sugar
- 3 eggs
- 1 tablespoon vanilla
- 1 pound (4 cups) cake flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 7 ounces milk
- 2 pounds fresh pineapple, diced small
- 1-1/4 pounds butter
- 1 pound (2-1/4 cups) brown sugar
Indian Butter Chicken

Preheat oven to 375F Melt a few T
- 1 cup butter, divided
- 1 onion minced
- 1 T. minced garlic
- 1 , 15oz can tomato sauce
- 3 cups heavy cream
- 2 t. salt
- 1 t. garam masala
- 1 1/2 lbs skinless, boneless chicken breast cut into bite size pieces
- 2 T. vegetable oil
- 2 T. tandoori masala

- 1 1/2 * 1 1/2 tablespoons extra-virgin olive oil
- Four * Four 9-inch flour tortillas
- 2 * 2 cups (about 8 ounces) coarsely shredded cheese (see note)
- 1 * 1 cup trimmed and diced firm ripe green or black figs (about 8 ounces or 6 large figs)

- 2 * 2 tablespoons minced fresh cilantro
Almond Roca Cake

Preheat oven to 350F. Butter and flour a 9 inch tube or bundt pan
- Cake:
- 6 eggs plus 2 egg yolks
- 1/4 c. granulated sugar
- 1/2 c. brown sugar, tightly packed
- 1/2 c. ground toasted almonds
- 1 tsp. vanilla extract
- 1 tsp. finely grated lemon zest
- 1 c. sifted all-purpose flour
- 1/4 tsp. salt
- 3 tbs. unsalted butter, melted and lightly browned
- SYRUP:
- 1/3 c. granulated sugar
- 1/2 c. water
- Amaretto to taste (at least 2 tbs)
- 1 recipe thick chocolate glaze
- 16 to 20 oz. Almond Roca broken into small bits, some as large as 1" square whipped cream
- THICK CHOCOLATE GLAZE:
- 4 oz. semisweet chocolate chips or grated squares
- 1/2 c. granulated sugar
- 1/4 c. light corn syrup
- 5 tbs. unsalted butter
- 1 tsp. vanilla extract
- 4 to 5 tbs. confectioners sugar
Curry Chicken Salad

Salad: Combine all salad ingredients (except salad greens) with enough dressing to moisten
- Salad:
- 2 cups diced, cooked chicken
- 1 cup seedless grapes, halved
- 1/2 cup diced celery
- 1/2 cup diced green pepper
- 1/2 cup peanuts

- Dressing:
- 1 cup plain yogurt
- 3 T. minced onion
- 3 T. orange juice
- 1 t. curry powder
- 1/2 t. salt
- 2 drops hot pepper sauce

- For Cookies:
- 1 1/3 cups all purpose flour
- 2 tbsp cocoa powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2/3 cup unsweetened applesauce
- 1 tbsp buttermilk
- 1 cup sugar
- 1/4 cup butter, room temperature
- 1 tsp vanilla extract
- 2 large egg whites
- 1/2 tsp red food coloring (more, if necessary)
- Mascarpone Cream Cheese Filling:
- 4 oz mascarpone cheese, room temperature
- 4 oz cream cheese, room temperature
- 2 tsp vanilla extract (vanilla paste is even better)
- 1 tbsp milk
- 1 1/2 cups confectioners' sugar

- 1 teaspoon peppercorns
- 1/4 cup sugar
- 4 cloves
- 4 oz. sliced bacon
- 1 cup sweet cream

- 1 1/2 cups soda cracker crumbs (30 crackers)
- 1/2 cup melted butter or margarine
- 5-6 medium onions, sliced
- 1 1/2 cups milk, scalded
- 3 eggs, slightly beaten
- 1/2 lb. Cheddar Cheese, grated
- 2 T butter
- 1 t salt
- pinch of pepper
