  • 4 large potatoes
  • 2 T. butter
  • 4-6 eggs
  • 4-6 strips of bacon, cooked and crumbled
  • 8 T. shredded cheddar cheese
  • 1 T. fresh parsley, chopped
  • salt and pepper to taste

Cooking time 45mins


Step 1

Bake potatoes then lay the potato on it's side and carefully cut off the top third of the potatoes. Hollow out the inside of the potato with a spoon to make a thin bowl. Place 1/2 T. butter in the middle of each bowl. Carefully break an egg in the bowl being careful not to break the yolk. Top with bacon, parsley and cheese. Bake at 350F for 20-25 mins or until the egg whites are set.
