Cuban Black Bean Soup Recipe

1. Saute garlic, onions and green pepper over medium to low heat until soft
- 1 large onion; chopped fine
- 1 medium green pepper; chopped fine
- 3-4 cloves of garlic; crushed or diced fine
- 1 tsp oregano
- 1/2 - 1 tsp of salt and pepper (to taste)
- 1 -2 large cans of black beans
- 2 cups water
- 2 tbsp of red wine vinegar
- Olive Oil; enough to coat bottom of pan
- Optional topping: finely diced raw onion
Halibut in tarragon

Preheat oven to 400 degrees
- 1 pound halibut steaks or fillets
- ½ cup low fat plain yogurt
- 1 tbsp mayo
- 1 tbsp grated red onion
- 1 tsp dried tarragon
- ½ cup grated mozzarella cheese
Lasgna

1. Combine ricotta, parm, mozz and 1/4 tsp of each salt and pepper
- 1 15oz part skim ricotta
- 1/4 C graded parm
- 8 oz part skim Mozzarella (2 cups)
- 2 cups baby spinach, roughly chopped
- 3/4 cup soy crumbles
- 2 cloves garlic minced
- 1/2 tsp dried oregano
- 1 26 oz jar marinara sauce
- 12 dry lasagna noodles
Granola with Flaxseed

1. Preheat oven to 350º F
- 2 cups old-fashioned rolled oats
- 1 cup sweetened shredded coconut
- ¾ cup sliced blanched almonds (about 2 ½ ounces)
- ¼ cup vegetable oil
- ¼ cup honey
- 1 tablespoon flaxseed oil
- ½ cup dried cranberries
- ½ cup golden raisins
- ¼ cup unsalted sunflower seeds
- 1 tablespoon ground golden flaxseed (from about 1 ½ teaspoons whole)
Fudge in a Flash

Combine all of the ingredients, except the nuts, in a medium saucepan
- 1 lb. powdered sugar (33/4 Cups)
- 1/2 Cup COCOA POWDER
- 1/8 tsp. salt
- 6 TB. butter
- 4 TB. milk (Laurel uses evaporated, we found 2% worked equally well)
- 1 TB. PURE VANILLA EXTRACT
- 1 Cup chopped nuts, optional
Tomato, Pasta and Spinach Soup

The Best Fudge Brownies Ever

* increase the salt to 1 tsp if you use unsalted butter Preheat oven to 350
- 1 cup (8 oz) butter
- 2 1/4 cups sugar
- 1 1/4 cups Dutch-process cocoa
- 1/2 tsp salt*
- 1 tsp baking powder
- 1 Tbsp vanilla extract
- 4 large eggs
- 1 1/2 cups (6 1/4 ounces) flour
- 2 Cups (12 oz bag) choc chips

1. Coat 13x9x2-inch microwave-safe dish with cooking spray
- 7 Graham cracker sheets
- 2 ½ cups mini marshmallows
- 1 pkg (12 oz., 2 cups) semi-sweet chocolate morsels
- 2/3 cup light corn syrup
- 3 T butter
- ½ cup crunchy peanut butter
- 3 c. Rice Krispies cereal
Pasta with Summer Squash and Ricotta

•Bring 6 quarts of water to a boil in a large pot and add 3 tablespoons kosher salt
- Kosher salt 1 pound summer squash* or zucchini, or a combination, cut lengthwise in half and sliced 1/3 inch-thich moons
- 1 cup fresh ricotta
- 6 tablespoons extra virgin olive oil
- ½ cup grated Parmigianino cheese plus extra for serving
- flaky sea salt
- 1 pound penne pasta
- Coarsely ground black pepper
- 2 to 3 tablespoons warm water
- 6 tablespoons coarsely chopped fresh mint
Sesame Asparagus
