Herby Cheese Bread

Preheat oven to 375. In a large bowl, combine 1 1/2 cups of the flour, the yeast, sugar and herbs
- 3 1/2 Cups flour, divided
- 2 pkgs. regular or quick rise yeast
- 2 T sugar.
- 1/2 tsp. rubbed sage
- 1/2 tsp cracked rosemary
- 1/4 tsp. Thyme
- 1/4 cup butter (1/2 stick), melted
- 1 1/4 cup warm water
- 1 egg
- 1 tsp. salt
- 1 Cup small cheddar cheese chunks
Apple Kuchen

Preheat oven to 325. In a mixing bowl, combine the flour, sugar, salt, baking powder and butter
- Streusel:
- 1 1/4 Cups all-purpose flour
- 1/4 Cup sugar
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 Cup cold butter, cut into small pieces
- 2 egg yolks
- 2 tsp milk
- 1/4 tsp vanilla
- 4 apples, peeled, cored and sliced
- 3/4 cup sugar
- 2 T flour
- 1/4 - 1/2 tsp cinnamon
- 2 Tb. butter, cut into small pieces
Cauliflower Soup

Mom's Recipe
- 1 medium head of cauliflower
- 2 cups water
- 1 stalk celery chopped
- 1 med onion chopped
- 1 carrot chopped
- 1 Tbsp lemon juice
- 2 Tbs butter
- 1/4 cup flour
- 14 oz veg broth
- 3 cups milk
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 cub shredded cheese
- Curry powder or paprika optional
Tofu and Vegetable Enchiladas with Red Chili Sauce

Remove excess water from tofu - crumble
- 1/2 package (7 oz) Tofu (firm or extra firm), drained
- 2 Tbs veg oil
- 1 tsp salt
- 1/2 Cup white mushrooms, thinly sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup fresh spinach, roughly chopped
- 8 corn tortillas
- 1 19 oz can enchilada sauce
- 1/4 white onion, thinly sliced
- Queso Fresco for garnish crumbled
Warm Nutty Caramel Brownies

1. Preheat oven to 375°F
- 1 pkg (12 oz) semi-sweet chocolate morsels, divided
- 1 pkg (18-21 oz) brownie mix (plus ingredients to make cake-like brownies)
- 3/4 cup packed brown sugar, divided
- 1 cup salted mixed nuts, divided
- 5 rolls (1.7 oz each) milk chocolate-covered chewy caramels, divided (40 pieces total)
- Vanilla ice cream (optional)
Shrimp and Avocado Pasta Salad

Cook pasta according to package instructions
- 1- 16oz package penne pasta
- 1 pound of cooked shrimp (16-20 count), peeled and deveined
- 1/2 cup shredded cheddar
- 1 avocado, peeled and diced
- 1 cup Stonyfield Organic Fat Free Plain Yogurt
- Juice of 2 lemons
- 2 tomatoes, seeded and diced
- 1 cucumber, peeled and sliced into 1/4-inch-thick half moons
- 1 cup green beans, blanched and chilled
- 1 teaspoon crushed red pepper
- Salt and pepper to taste
Stuffed Peppers

- 1 -1 head broccoli
- 8 -8oz. Feta cheese
- -couscous
- -tomato sauce

- 2 lbs Ore Ida hash Brown, Frozen
- 2 cans cream of potato soup
- 16 oz. sour cream
- 8 oz. shredded cheddar cheese

- Crust
- 1/2 cup all-purpose flour
- 1/2 cup whole-wheat pastry flour
- 1/4 tsp. salt
- 2 Tbs. vegetable oil
- Filling
- 1 Tbs. black or yellow mustard seeds
- 1 tsp. curry powder
- 1 tsp. ground ginger
- 1/2 tsp. ground cumin
- 1/8 tsp. red pepper flakes, optional
- 5 medium potatoes, peeled and quartered (1 1/4 lb.)
- 1 1/2 tsp. vegetable oil
- 1 medium onion, diced (1 cup)
- 1 medium carrot, diced (1/2 cup)
- 3 cloves garlic, minced (1 Tbs.)
- 1 cup frozen peas
- 1 cup low-sodium vegetable broth
- 2 tsp. agave nectar or sugar
- 2 Tbs. soymilk
