Veggie Penne

1. Cook the carrots in lightly salted boiling water in a covered saucepan for 10 minutes or until they're tender
- 2 cupssliced carrots
- 1 can (15 ounces)diced tomatoes with basil, oregano, and garlic or 15 ounces tomato sauce
- 8 ouncesdried multigrain penne pasta
- 2 tablespoonsfinely shredded Parmesan cheese
Impossibly Easy Spinach and Feta Pie

1. Heat oven to 400. Grease pie plate
- 1 pkg (10 oz) frozen chopped spinach, thawed and sqeezed to drain
- ½ cup crumbled feta cheese
- 4 med green onions, slices
- ½ cup Bisquick
- 2/3 cup milk
- ¼ tsp salt
- 1/8 tsp pepper
- 2 eggs
Nancy’s Ice Cream Cake

-crush up oreos, -pour in melted butter and mix -Press onto 9 inch springform pan -Bake at 350* for 10 min
- 1/2 of large pack of oreos (1 ½ rows)
- 1/2 stick butter, mleted
- 9 inch springform pan
- 2 half gallons ice cream
- Hot fudge (hersheys hot fudge)
- Cool Whip
- Candy toppings if desired
Southwestern Salad with Avocado-Lime Dressing

1. Combine lettuce, beans, tomatoes, and corn in clear glass bowl
- 2 cups chopped romaine lettuce
- 1 1/2 cups cooked pinto beans or 1 15oz can pinto beans, rinsed and drained
- 1 cup grape tomatoes, chopped
- 1/2 cup fresh or frozen corn kernels
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 ripe avocado
- 3/4 cup prepared (not chunky) salsa
- 1/2 cup low-fat sour cream
- 3 Tbsp. lime juice
- 4 drops Tabasco sauce, optional
- 1/3 cup crushed corn tortilla chips (about 20 chips), optional
Cider-Glazed Carrots with Pumpkin Seeds

Preheat oven to 450 degrees
- 1 pkg (2 lbs) Food You Feel Good About Organic Carrots, trimmed, peeled
- 2 Tbsp Wegmans Basting Oil
- 2 cups Wegmans Apple Cider
- 1 Tbsp Wegmans Clover Honey
- 1 Tbsp Wegmans Lemon-Dill Finishing Butter (Dairy Dept)
- Salt and pepper to taste
- 2 Tbsp organic tamari pumpkin seeds (Bulk Foods)
Eggplant Casserole

-Cook eggplant in salted water until tender, 6-7 minutes
- Topper:
- 1 * 1 eggplant, peeled and diced (~4cps)
- 1 * 1egg slightly beated
- 1/3 * 1/3 cup milk
- * ½ cup chopped onion
- 1 * 1 can cream mushroom soup
- * ¾ cup herb stuffing
- 1 -1 cup sharp chedder cheese
- 1/2 -1/2 cup crushed herb stuffing
- 2 -2 T. butter, melted

- 2 c. currant juice
- 2 c. red rasp. Juice
- 7 1/2 c. sugar
- 1 pack certo
Szechuan Black-Eyed Pea Salad

Toss together black-eyed peas, bell pepper, onion, jalapeno pepper, and garlic in large bowl
- 2 (14 ounce) cans black-eyed peas, rinsed and drained
- 1 medium green bell pepper, chopped (1 cup)
- 1/2 cup red onion, chopped
- 1 jalapeno pepper, seeded and finely minced (2 Tbsp)
- 1 garlic clove, minced (1 tsp)
- 1 avocado, cubed (1 cup)
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon szechuan sauce
- 2 teaspoons sugar
Grilled Tuna and Veggie Salad

This is a wonderful and filling meal, and the tuna and veggies cook in a flash
- French Salad Dressing:
- 2 tuna steaks, 4-6 oz. each
- 4 tsp. olive oil, divided
- 2 tsp. NORTHWOODS SEASONING
- 10 small red potatoes, scrubbed and quartered
- 8 oz. fresh green beans, ends trimmed and halved crosswise
- 1/4 tsp. GROUND BLACK PEPPER
- 1/4 tsp. GRANULATED GARLIC POWDER
- 1/8 tsp. salt
- 2 small heads butter lettuce or a mix of butter and Romaine lettuce, torn into bite-sized pieces
- 2-3 small ripe tomatoes, cut into eighths
- 1 Cup salad oil
- 1/2 Cup cider vinegar
- 1/3 Cup ketchup
- 1 small onion, minced
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
Baked Oatmeal

Make the night before and then bake in the morning
- 1/2 Cup butter, softened (1 stick)
- 1/4 Cup white sugar
- 1/2 Cup brown sugar
- 2 eggs
- 1 Cup milk
- 1/2-1 tsp. PENZEYS CINNAMON
- 1/2 tsp. salt
- 1 TB. baking powder
- 3 Cups regular or quick-cooking oats
- 1/2 Cup fresh or frozen blueberries
- 1 peach, skinned, chopped, pit removed
- 2 TB. VANILLA SUGAR
- warm milk (optional)
