Easy Cheesy Zucchini Bake

Preheat oven to 350. Combine the tomatoes, zucchini, squash, seasonings and cheddar cheese
- 2 medium tomatoes, peeled and cut into wedges
- 2 small zucchini, sliced
- 2 small yellow summer squash, sliced
- 1/2 tsp thyme
- 1 tsp basil
- 1 tsp garlic powder
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated parmesan or romano cheese
- 1/3 cup dry bread crumbs
- 1 Cup shredded mozzarella cheese (optional)
Apple-Cranberry Galette

1) Knead It. In a food processor with a blade attachment, mix both flours and ½ cup butter
- ½ cup whole-wheat flour
- ½ cup all-purpose flour, plus 2 Tablespoons extra for your work surface
- ½ cup plus 1 Tablespoon cold unsalted butter, divided, cut into small pieces
- 2 ½ Tablespoons cold water
- 3 Medium apples, peeled and cored
- 1 cup cranberries
- 1/3 cup sugar
- 1 teaspoon cinnamon
Butternut Squash with Baby Spinach

Directions: Preheat oven to 350 degrees
- 2 pkgs (20 oz each) Food You Feel Good About Cleaned & Cut Butternut Squash, cut in 1-inch cubes
- 2 large red onions, peeled, chopped (about 4 cups)
- 3 Tbsp Wegmans Basting Oil
- Wegmans Sea Salt and Cracked Black Pepper to taste
- 1 pkg (6 oz) Food You Feel Good About Fresh Baby Spinach
- 3/4 cup Food You Feel Good About Sweetened Dried Cranberries
Big Apple Pancake

Fire up the oven for this family-size flapjack, filled with everyone's favorite fruit
- 2 Tbsp unsalted butter
- 1 large sweet apple, peeled, cored, and cut into 1/4-inch wedges
- 1/2 cup whole milk
- 1/2 cup all-purpose flour
- 4 eggs
- 3 Tbsp sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- Confectioners’ sugar
Penne With Summer Squash and Ricotta

1. Cook pasta with 3 Tbsp
- Kosher salt
- 1 cup whole milk ricotta
- 6 Tbsp. extra virgin olive oil
- 1/2 cup grated coarsely shiopped fresh mint
- Coarsely ground black pepper-Reggiano
- 1 lb. summer squash cut lengthwise in half and sliced into 1/2-in-thick pieces
- Flaky sea salt
- 1 lb. penne pasta
- 6 Tbsp. coarsely chopped fresh mint
- Coarsely ground black pepper
Cream Cheese Cupcakes

Fill cupcakes 2/3 full with batter
- Cupcakes:
- 1 pkg of cake mix
- Filling:
- 8 oz. pckg cream cheese
- 1/3 cup sugar
- 1 egg
- 1 cup choc. Chips
- Dash of salt
Asian Cole Slaw

Mix oil, sugar and vinegar
- 16 oz pkg cole slaw or broccoli slaw
- 4 green onions
- 1/2 cup sunflower seeds
- 1/2 cup slivered almonds
- 1 pkg Ramen noodles (crushed)
- 1/3 - 1/2 cup oil
- 3 Tbsp sugar
- 3 Tbsp vinegar (red wine or balsamic)
Baked French Toast Casserole with Maple Syrup

Directions Slice French bread into 20 slices, 1-inch each
- Praline Topping:
- 1 loaf French bread (13 to 16 ounces)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Dash salt
- Praline Topping, recipe follows
- Maple syrup
- 1/2 pound (2 sticks) butter
- 1 cup packed light brown sugar
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Cajun Skillet Beans

In a heavy saucepan or skillet, saute the onions and garlic in the oil on medium heat
- 1 medium onion, chpped
- 3 garlic cloves, minced
- 2 Tbsp. veg oil
- 3 celery stalks (about 1 cup chopped)
- 2 green or red bell peppers (about 1 1/2 cups chopped)
- 1 tsp chopped fresh thyme (1/2 tsp dried)
- 1 Tbsp chopped fresh basil (1 tsp dried)
- 1 tsp chopped fresh oregano (1/2 tsp dried)
- 1/4 tsp. ground black pepper
- pinch each of cayenne and salt
- 2 cups chopped fresh or canned tomatoes (14 1/2 oz can)
- 1 Tbsp honey or molasses
- 1 Tbsp Dijon mustard
- 4 cups cooked black-eyed peas or butter beans (two 10-ounce frozen packages or two 16-ounce cans, drained)
