Stuffed Squash with Bulgur and Feta

Pre-heat oven - 400 degrees 1
- 4 summer squash
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1/2 cup sliced almonds
- salt and pepper
- 3/4 cup bulgur wheat
- 8 oz feta cheese crumbled
- lemon wedges for serving
Quinoa Fruit Salad

- Dressing:
- 1 cup quinoa
- 2 cups boiling water
- 1 cup unpeeled, seeded and diced cucumber
- 1/2 cup chopped dried apricots or golden raisins
- 1/2 cup canned drained Mandarin orange sections, halved
- 1/4 cup toasted slivered almonds
- 2 thinly sliced green onions
- 2 Tbsp chopped parsley
- 1 tsp lemon or lime zest
- 3 Tbsp fresh lemon or lime juice
- 1 Tbsp sesame oil
- 1 tsp sugar
- 1/4 tsp cumin
- 1/4 tsp coriander
Bahamian Baked Macaroni and Cheese

Boil the Macaroni with the onion and green pepper
- 16 oz. box macaroni (small cut)
- 1 lb shredded sharp Cheddar Cheese
- 1 Medium Onion, diced
- 1 Medium Green Sweet Pepper, diced
- 1 Stick Margarine (1/4 lb.)
- 6 Eggs, beaten
- 2 Cans Evapourated Milk
- 2 Tbs worcestershire sauce
- Hot sauce to taste
- salt and pepper
Summer Squash Casserole

In a saucepan, cook sliced squash and chopped onion in boiling salted water for minutes
- 2 pounds yellow summer squash sliced (6 cups)
- ¼ chopped onions
- 1 can condensed cream of mushroom
- 1 cup dairy sour cream
- 1 cup shredded carrot
- 1 8-ounce package herb seasoned stuffing mix
- ½ cup butter or margarine melted

- 2 tbsp vegetable oil
- 2 medium onions, chopped fine (2 cups)
- 1 large celery rib, chopped fine (about ½ cup)
- 1 small leek, white and light green parts only, chopped fine (about ½ cup)
- 2 medium garlic cloves, minced or pressed through a garlic press (2 tsp)
- 1 lb cremini or white mushrooms, cleaned and sliced about ¼ inch think (about 6 ½ cups)
- 1 cup raw unsalted cashews
- 1/3 cup mayo
- 2 cups panko
- Ground black pepper
- 12 burger buns
Shanghai Grilled Tofu

- 2 Tbs plus 2 tsp wine vinegar

Vegetable Polenta Stacks

1) Bring water to a boil in a medium saucepan and add cornmeal
- 3 Cups water
- 1 ½ Cups finely ground cornmeal
- 2 Tablespoons chopped fresh basil
- 1 Tablespoon chopped fresh rosemary
- Cooking spray
- 1 Large zucchini, sliced diagonally
