Super Eggplant Subs

Preheat oven to 450 degrees F
- 1 cup extra-virgin olive oil, eyeball it
- 2 large cloves cracked garlic, 2 cloves chopped garlic
- 2 medium eggplant, firm
- Coarse salt and black pepper
- 1/2 red onion, chopped
- 1 (28-ounce) can chopped fire roasted tomatoes (recommended: Muir Glen)
- 1 small (8-ounce) can tomato sauce
- 4 sub rolls, split
- 1 cup fresh basil leaves, thinly sliced or torn
- 1/2 cup grated Parmigiano-Reggiano
- 1 pound smoked mozzarella, thinly sliced
Blueberry Spice Muffins

Preheat oven to 400. For the muffins: Combine the dry ingredients in a large bowl
- Topping:
- 1 3/4 Cup flour
- 1/2 cup sugar
- 2 1/2 tsp baking powder
- 1 tsp. cinnamon
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1 egg lightly beaten
- 3/4 cup milk
- 1/3 cup melted butter
- 1 1/4 cup fresh blueberries
- 1 T sugar

Preheat oven to 400°F 2 Put all ingredients (except chives) into a bowl, toss with your (clean) hands to coat com...
- 2 lb small new potatoes (look for the smallest you can find, the potatoes should be no bigger than 1 1/2 inches, if they are bigger, cut them into 1 to 1 1/2 inch pieces)
- 1 medium onion, sliced in the direction of root to top
- 6 cloves of garlic, crushed with peel on (do not remove peel)
- 2-3 small to medium vine-ripened tomatoes, or plum tomatoes, cut into 1 1/2-inch chunks
- 10 pitted olives, green and black (Kalamata and Nicoise)
- 1/2 teaspoon red chile flakes
- 1/4 teaspoon garlic powder
- 1 Tbsp herbes de Provence
- 1/2 cup olive oil
- 2 teaspoons red wine vinegar
- 2 teaspoons Kosher salt
- Freshly ground black pepper
- 1 Tbsp chopped fresh chives for garnish

Veronica's Veggie Meatloaf with Checca Sauce

For the Checca Sauce: Combine the cherry tomatoes, scallions, garlic, basil, and oil in a processor
- Checca Sauce:
- 1 pint cherry tomatoes (about 2 cups, or 12 ounces), halved
- 3 scallions (white and pale green parts only), coarsely chopped
- 3 cloves garlic, chopped
- 8 fresh basil leaves
- 3 tablespoons olive oil
- Pinch salt
- Pinch freshly ground black pepper
- Lentil Loaf:
- 3/4 cup lentils (about 5 ounces)
- 3 cups reduced-sodium vegetable broth
- 1 cup uncooked short-grain brown rice, rinsed well
- 1/2 cup finely chopped white onion
- 1/2 cup shredded carrots
- 1 celery rib, sliced
- 1/2 cup frozen corn kernels
- 2 tablespoons butter, divided
- 10 ounces fresh baby spinach leaves (about 4 cups)
- 1 1/2 cups cubed whole milk mozzarella cheese, divided (about 8 ounces total)
- 2 eggs, lightly beaten
- 1/4 cup freshly grated Parmesan cheese, plus 2 tablespoons
- 1/3 cup chopped fresh basil leaves
- 1/2 teaspoon salt

- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 3/4 tsp dried mint, crumbled, or 2 tsp fresh

- 4 brine-cured black olives, such as Kalamata, pitted and cut into slivers
- 1 cup thinly sliced cucumber
- 1/2 cup roasted red pepper, chopped
- 2 radishes, or more to taste, quartered and thinly sliced
- 1/2 cup crumbled feta
- 1 head romaine or bibb lettuce, but into 1/4 inch ribbons (about 4 cups)

Cuban Picadillo (modified)

1. Saute garlic, onions and green pepper over medium to low heat until soft
- Optional:
- 1 lb soy crumbles
- 1 large-medium onion; chopped fine
- 1 small-medium green pepper; chopped fine
- 1 small can of tomato sauce
- 4 cloves of garlic; crush or dice fine
- 1 tsp oregano
- 1/2 - 1 tsp salt and pepper (to taste)
- Olive oil; enough to coat bottom of pan
- 2 small potatoes; peeled and diced
- 10-12 green olives; sliced in half or diced
- capers
- raisins
- 1/2 cup stock
- cumin or chili pepper according to taste
