Black Bean Soup

Heat oil & saute onions, raise heat and add beans and broth
- 1 tsp olive oil
- 1 med. onion chopped
- 2 - 15 oz cans black beans
- 14.5 oz veggie broth
- 1 cup frozen corn kernals
- 1 - 14.5 oz. can mex tomatoes
- 3 bay leaves
- 1 tsp. minced garlic
- 1 tsp. dried thyme
- 1 tsp. balsamic vinegar
- 1/2 tsp. cumin
- sour cream
- cheddar cheese

Wegman's Shrimp Scampi

- 1 pkg (16 oz) uncooked shrimp (31-35 per lb), thawed, peeled, and patted dry, remove tails
- Wegmans Pan Searing Flour
- 1 Tbsp Wegmans Pure Olive Oil
- 4 Tbsp (1/2 pkg) Wegmans Garlic Cheese Finishing Butter (Dairy Dept)
Asparagus and Pea Risotto

Best Risotto ever!
- 8 cups chicken stock
- 1 bunch asparagus, ends snapped and reserved, stalks sliced
- 1 cup shelled fresh peas, pods reserved
- 1 tablespoon unsalted butter, plus 1 additional tablespoon to finish (optional)
- 1 tablespoon olive oil
- 1 small onion, minced
- 2 cups Arborio rice
- 1 glass dry white wine
- 1 cup grated parmesan cheese
- Salt and pepper
Antipasto Salad

Mix all ingredients and chill overnight!
- 1 lb. medium shell macaroni
- 1/2 lb. Provolone Cheese
- 1 can black olives
- 1 can small green olives
- 3 tomatoes cut bite size
- 1 green pepper cut up
- 3 celery stalks cut up
- 1 small onion chopped
- 1/2 tsp. salt
- 1 tsp. oregano
- 1 tsp. pepper
- 3/4 cup oil
- 1/2 cup vinegar(to taste-can increase to 1 cup)
Blueberry Torte

Mix butter, flour and sugar as for pie crust
- ½ cup butter
- 1 cup flour
- 1 tbsp sugar
- 1-8oz pkg cream cheese
- 1 cup confectioner’s sugar
- 1 pint whipping cream or 1 pkg (1 ¼ oz) Cool Whip
- 1 ½ pints blueberries
- ½ cup water
- 2/3 cup sugar
- 2 tbsp cornstarch dissolved in ¼ cup water
Italian Fish Bake

This is a very easy, low-fat recipe that can be put together in a snap
- 2 lbs. cod or haddock filets (preferably thawed, but semi-frozen is ok)
- 1 small onion, sliced
- 1-2 small zucchini, halved and sliced
- 1/4 tsp. GROUND BLACK PEPPER
- 1/4 tsp. GRANULATED GARLIC
- 1 1/2 tsp. CALIFORNIA BASIL
- 1/2 tsp. MARJORAM
- 1 15 oz. can tomato sauce
- 1 14 oz. can diced tomatoes with juice
Pesto, Red Pepper, and Cheese Sandwiches (makes 2 sandwiches)

- 4 slices sourdough bread
- 4 tbsp pesto
- 4 large pieces of roasted (preferable peeled) red peppers
- 3-4 oz. sliced mozzarella or cheddar cheese

These muffins are like a yummy, portable bowl of oatmeal
- 1 cup rolled oats
- 1 cup flour
- 1/3 cup sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 - 1 tsp ground nutmeg
- 1 - 2 tsp cinnamon
- 1 cup raisins or chopped dried apricots
- 3/4 cup chopped nuts
- 1 egg beaten
- 1 tsp pure vanilla extract
- 1/2 cup oil
- 3/4 cup milk
Bean Burgers

1. Prepare charcoal grill with medium-hot coals or heat gas grill to medium-high (or heat oven broiler)
- 2 cans(15.5 ounces each) pinto beans, drained and rinsed
- 1/2 cupdry fine bread crumbs
- 1/2 cupbottled salsa
- 1 egg
- 1 teaspoonchili powder
- 1/2 teaspoonground cumin
- 1/2 cupcoarsely crushed baked tortilla chips
- 3 pitas(2 ounces each, 4-inch), halved
- 12 lettuce leaves
- 12 slicestomato
- Bottled salsa
