Carrot Sauce; Herbed Parmesan Carrots

- 2 Tbsp. Butter
- ¼ c. orange juice
- 1/8 tsp. ginger
- 1 Tbsp. Chopped or 1 tsp. dried parsley
- 2 Tbsp. Honey
- Salt & pepper
- Place all ingredients in measuring cup and heat in microwave to blend flavours. Stir and drizzle over cooked carrots.
- Herbed Parmesan Carrots
- Makes 4 servings
- Cook 3 cups sliced carrots. Drain.
- (Microwave in ¼ c. water 6 -7 min)
- Mix: 1/3 c. miracle whip
- 1/3 c. parmesan cheese
- ¼ c. chopped parsley or 1 Tbsp. Dried parsley
- Toss with carrots.
Salad Dressing, Orange

- 1/3 cup frozen orange juice concentrate
- ¼ c. red wine vinegar
- 2 tsp. Dijon mustard
- ¼ tsp. fennel or Italian seasoning
Chicken Breasts Diane

1. Place chicken breast halves between sheets of waxed paper or plastic wrap
- 4 servings
- 4 large boneless chicken breast halves or 8 small
- ½ tsp. salt
- ¼ to ½ tsp. black pepper
- 2 Tbsp. Olive or salad oil
- 2 Tbsp. Butter or margarine
- 3 Tbsp. chopped fresh chives or green onions
- Juice of ½ lime or lemon
- 2 Tbsp. Brandy or cognac optional
- 3 Tbsp. chopped parsley (less if dried)
- 2 tsp. Dijon-style mustard
- ¼ c. chicken broth

- 8 cups regular (not quick) oatmeal
- 1 1/3 cup dessicated coconut
- 1 1/3 cup long coconut
- 2/3 cup brown sugar
- 2/3 cup cashews chopped
- 2/3 cup almonds chopped
- 2/3 cup walnut pieces
- 2 tsp. salt
- 2 tsp. cinnamon
- 1 cup sunflower seeds (raw)
- 2/3 cup sesame seeds
- 2 cups bran flakes
- 2 cup skim milk powder
- 1/2 cup or less flax
- 1 cup raisins
- 1 cup dried cranberries
- 2/3 cup pumpkin seeds
- 1/2 cup Fibre First for crispiness
- 2 cup salad oil
- 1 tsp. maple flavouring
- 1 tsp. almond flavouring
- 1 tsp. vanilla
- 2/3 cup water

Pecan Pie

- Unbaked 9 “ pie shell
- 1/2 cup margarine
- 3/4 cup white corn syrup
- 1/4 cup maple flavour syrup
- 1/2 cup granulated sugar
- 1 tsp. vanilla
- 3 eggs slightly beaten
- 2 cups pecans. Chop 1 cup to put in with pie mixture. Decorate top of pie with other cup of 1/2 pecans.
Salted Peanut Chews

Crust: Combine all ingredients at low speed until crumbly

- ½ tsp. salt

- ½ c. butter or margarine, softened
- 1 tsp. vanilla
- 2 egg yolks
- Topping:
- 2/3 c. corn syrup
- 1/4 c. margarine or butter
- 2 tsp. vanilla
- 12 oz. pkg. Peanut butter chips
- 2 c. Rice Krispies
- 1 c. salted peanuts, crushed
- Heat oven to 350 o F.

- 1/2 cup mushrooms, sliced
- 1 Tbsp. lemon juice
- 1 tsp. sugar
- 1 tsp. salt

- 1 ½ cups icing sugar.

- 1 cup margarine
- 1 ½ c. brown sugar
- 1 egg
- 1 tsp. Vanilla
- 1 ½ c. oatmeal
- ¾ c. fine coconut
- 1 ½ cup whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 ¼ c. chocolate chips
