  • 2 Tbsp. Butter
  • ¼ c. orange juice
  • 1/8 tsp. ginger
  • 1 Tbsp. Chopped or 1 tsp. dried parsley
  • 2 Tbsp. Honey
  • Salt & pepper
  • Place all ingredients in measuring cup and heat in microwave to blend flavours. Stir and drizzle over cooked carrots.
  • Herbed Parmesan Carrots
  • Makes 4 servings
  • Cook 3 cups sliced carrots. Drain.
  • (Microwave in ¼ c. water 6 -7 min)
  • Mix: 1/3 c. miracle whip
  • 1/3 c. parmesan cheese
  • ¼ c. chopped parsley or 1 Tbsp. Dried parsley
  • Toss with carrots.

  • 8 cups regular (not quick) oatmeal
  • 1 1/3 cup dessicated coconut

  • Unbaked 9 “ pie shell
  • 1/2 cup margarine
  • 3/4 cup white corn syrup
  • 1/4 cup maple flavour syrup
  • 1/2 cup granulated sugar
  • 1 tsp. vanilla
  • 3 eggs slightly beaten
  • 2 cups pecans. Chop 1 cup to put in with pie mixture. Decorate top of pie with other cup of 1/2 pecans.
