MOM'S YORKSHIRE PUDDING

Heat oven to 400˚ F. Put oil into muffin tin and heat until hot

Pre heat oven to 350. Combine oil and sugar
- 3/4 c. oil
- 1 3/4 c. sugar
- 3 c. diced fressh apples
- 2 beaten eggs
- 2 c. flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 1/2 chopped nuts or raisin

In a bowl put the chocolate, icing sugar and ground almonds and whisk
- 3 oz. bittersweet chocolate
- 1 c. icing sugar
- 1 c. ground almonds
- 1/4 c. DARK rum
- 1 tsp. vanilla
- rum
- chocolate sprinkles
APRICOT ZINGS***

Bottom layer: Melt butter
- Bottom layer:
- 3/4 c. melted butter
- 1 c. flour
- 1 c. packed brown sugar
- 1 c. Nilla wafers
- 1/2 c. medium unsweetend coconut
- 1/2 tsp. salt
- Filling:
- 1 c. dried apricots
- enough water to cover the apricots
- 2 large eggs
- 1 c. packed brown sugar
- 1 tbsp. lemon juice
- 1/3 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt

Spray silicone muffin pan with pam
- 2 c. + 4 tbsp. flour
- 2 tbsp. sugar
- 4 tsp. baking powder
- 10 oz. sharp old cheddar cheese
- 1 c. skim milk
- 2 eggs beaten
- 4 tbsp. melted margarine
CORN FRITTER****

Make batter: beat eggs into small bowl and beat on medium speed for 1 minute

- 2 c. well drained whole kernal corn
- fritter batter
- 2 eggs
- 1/2 c. milk
- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. melted shortening
S'MORES SQUARES*****

Butter a 13 x 9 pan. Pour half the cereal in the pan and set aside
- 8 c. Golden Grahams (385 g)
- 5 1/2 c. miniature marshmallows
- 1/3 c. margarine
- 1/3 c. corn syrup
- 1 3/4 milk chocolate chips
- 1 tsp. vanilla
NO BAKE MINCEMEAT MALLOW CHEESECAKE*

- 1 c. vanilla wafers
- 1/4 c. margarine
- 1 3/4 c. mincemeat
- 4 c. minature marshmallows
- 1/3 c. orange juice
- 2 8 oz. soften cream cheese
- 2 tsp. grated orange rind
- 1/2 pt. whip cream

- 6 oz. fresh asparagus
- 1/2 cup diced yellow bell pepper

- 1 1/2 tbsp. fat free chicken broth
- 1 tbsp. thawed orange juice concentrate
- 1 tbsp. balsamic vinegar
- 1 tsp. grated orange rind
- 1 1/2 tsp. olive oil
- 1/4 tsp. salt
