APPLE CREPES

In a large bowl, stir together flour, sugar and salt
- 2/3 c. flour
- 2 tsp. granulated sugar
- 1/2 tsp. salt
- 2/3 c. milk
- 1/3 c. water
- 1 tbsp. melted butter
- 2 eggs
- 1/3 c. butter
- 1 c. packed brown sugar
- 1 tsp. cinnamon
- 6 c. cliced apples
BBQ Sauce

Mix together
- 1 c. ketchup
- 1/2 c. honey
- 1/52 c. brown sugar
- 1/4 c. soya sauce
- 5 cloves minced garlic
HERBED QUINOA WITH DRIED APRICOTS AND POMEGRANATE

Heat 1 tsp. oil in medium sized saucepan over medium heat
- 1 tbsp. olive oil divided
- 1 small diced onion
- 1/3 c. quinoa
- 2/3 c. vegetable stock
- 2 tbsp. dried diced apricots
- 3 tbsp. pomegranate seeds
- 1 tbsp. chopped fresh cilantro
- 2 tbsp. chopped fresh parsley
- pinch ground cinnamon
- 1/2 tsp. finely zested lemon
- pinch sal
- fresh ground black pepper
CRANBERRY SALAD****

Mix the cranberries, marshmallows and sugar together and put into the fridge overnite
- 1 bag (2 c.) raw frozen cranberries (chopped in food processer)
- 4 c. mini marshmallow
- 1 1/2 c. sugar
- 4 c. chopped apples
- 1 c. chopped grapes
- 1 c. chopped walnuts (optional)
- 1/2 tsp. salt
- 2 c. whipping cream (whipped with whip it (stabilizer))
YANKEE DOODLE BEEF

Brown hamburger and then add the rest of ingredients
- l lb. hamburger
- onion salt
- minced garlic
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 c. macaroni
- 2 8 oz. cans tomato sauce
- 1 1/2 tsp. worchestershire sauce
- grated mozeralla cheese
LIGHT FRUIT CAKE

Prepare fruit and nuts. Raisins should be washed and dried
- 1 1/2 lbs. light raisins
- 1 1/2 lbs. glace cherries
- 1 c. mixed peel
- 1 1/2 c. blanched almonds
- 2 c. flour
- 1 c. butter
- 1 c. granulated sugar
- 4 beaten eggs
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 tsp. almond flavoring
- 1 tsp. brandy flavoring
- 1/4 c. fruite juice i.e. orange juice
BLUEBERRY FLAX MUFFIN

Place oven rack in the middle position
- 1/4 c. ground flax seeds (4 tbsp.)
- 1 3/4 C. whole wheat flour
- 1 c. flour
- 3/4 c. packed brown sugar
- 2 tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 2 c. fresh or frozen (do not thaw) blueberries
- 3 large beaten eggs
- 1 1/2 c. skim milk
- 1/2 c. unsweetened applesauce
- 1 tsp. vanilla
- pam
CHOCOLATE GLAZE

Melt butter and chocolate together
- 1 tbsp. butter
- 1 sq. unsweetened chocolate
- 1 1/2 tbsp. hot milk
- 1/2 c. icing sugar
CHOCOLATE GANACHE CAKE

Place chocolate and butter in a large mixing bowl; add boiling water and stir until smooth
- Ganche:
- 2 oz. 53% cacao dark baking chocolate, coarsely chopped
- 2 tbsp. butter
- 3/4 c. boiling water
- 3/4 cup sugar
- 1/4 cup buttermilk
- 1 egg
- 1 tsp. vanilla extract
- 1/2 tsp. orange extract
- 1 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup half and half cream
- 3 oz. 53% cacao dark baking chocolate, coarsely chopped
LEMON CHIFFON PIE FILLING

Boil over direct heat the sugar and the boiling water
- 1 c. sugar
- 1 1/4 c. boiling water
- rind of a lemon
- 1/2 c. cold water
- 3 tbsp. cornstarch
- 3 egg yolks
- 1/4 tsp. salt
- 1 tbsp. butter
- 1 1/2 tsp. lemon juice
- 3 egg whites
- 3 tbsp. sugar
