1. Heat oven 350 2. Butter a 9x12 inch pan or glass dish
- 4 cups zucchini
- 1 cup butter milk baking mix - Bisquick
- 4 eggs
- 1/2 cup finely chopped onions
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup veggie oil
- 2 tbs chopped parsley
- 1 garlic clove, chopped finely
- 1/2 tsp dried oregano
- 1/2 tsp seasoning salt
- fresh ground pepper
Quinoa Recipe

Yellow Quinoa Recipe
- Ingredients
- 1 3/4 cups quinoa
- 2 1/2 cups water (I use chicken broth)
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 1 medium onion, chopped
- 1 green bell pepper, thinly sliced
- 1 garlic clove, minced
- 1 1/2 teaspoons canned chopped green chiles (leftovers will keep in the refrigerator for up to a month, can be used for additions to scrambled eggs, homemade pizza, etc.)
- 1 tablespoons adobo seasoning
- 3 tablespoons flat-leaf parsley, roughly chopped, plus more for garnish
- Salt
Sweet and Tangy Pulled Pork

1. Cut pork roast in half and place in a 4-5 quart slow cooker
- 1 boneless pork shoulder butt roast - 3 to 4 pds)
- 1 jar (18 oz) apricot preserve
- 1 large onion - chopped
- 2 tbs reduced sodium soy sauce or substitute 1/4 cup chicken broth.
- 2 tbs dijon mustard
- Hamburger buns

Braised Short Ribs - Asian Style

1. Pre-heat oven to 350 F 2
- 5 pounds beef short ribs, cut into 4 oz portions (bone in)
- 1 cup soy sauce
- 1/4 cup rice wine vinegar
- 3 cloves garlic, peeled and smashed
- 1 (5-inch) stalk lemongrass, halved and smashed
- 1 T peeled and minced ginger
- 1/2 cup light brown sugar
- 1 quart water
- 1/2 cup sliced green onion bottoms (what part only)
- 3/4 t crushed red pepper
- 1/4 cup fresh orange juice
- 1/4 cup hoisin sauce
- 2 T fresh lemon juice
- Jasmin Rice for serving
- 2 t finely graded orange rind for serving
- Sliced green onion tops (green part) for garnish
Do Ahead Mashed Potatoes

1. Scrub potatoes. Leave skin on or peel thinly and remove eyes
- 9 medium potatoes (3 pounds)
- 3/4 cup milk
- 1/2 cup whipping cream (heavy)
- 1/2 cup butter
- 1 t salt
- 1/8 t pepper
Glazed Pork Chop

1. In a small bowl, combine the preserves, dressing and mustard
- 2/3 cup apricot preserves
- 1/2 cup Italian salad dressing
- 1 tbs Dijon mustard
- 4 boneless pork loin chops (1 inch thick and 6 oz each)
Crab Cakes with Old Bay Mayo

1. In a bowl combine 1 cup panko with veggies, lemon juice, mayo and eggs, Tabasco, parsley and salt
- 2 cups panko breadcrumbs, divided
- 1/4 cup each minced red bell pepper, celery, red onion
- 2 tbs lemon juice
- 1/2 cup mayo
- 2 large eggs
- 3 dashes Tabasco sauce
- 3 tbs flat leaf parsley, finely chopped
- 1/2 tsp kosher salt
- 2 cups fresh crab meat
- 1/4 cup clarified butter
- OLD BAY Mayo: 1/3 cup mayo, 2 tsp lemon juice,1/2 tsp Old Bay Seasoning
Black Mussels

- 1 cup zweigeit red wine
- 3 cloves garlic

- 1/4 cup chopped parsley
