  • 9 medium potatoes (3 pounds)
  • 3/4 cup milk
  • 1/2 cup whipping cream (heavy)
  • 1/2 cup butter
  • 1 t salt
  • 1/8 t pepper

Step 1

1. Scrub potatoes. Leave skin on or peel thinly and remove eyes. Cut into large pieces. 2. Heat 1 inch water (salted) bring to boil in 3 qt sauce pan. Add potato pieces. cover and heat to boil. Cook covered for 20-25 minutes. Drain and shake potatoes in dry pan to dry over low heat. 3. Heat milk, whipping cream, butter, salt and pepper in 1 qt sauce pan over medium-low heat, stirring occasionally, until butter is melted. Measure out 1/4 cup milk mixture, cover and place in refrigerator. 4. Add remaining milk mixture in small amounts to potatoes in bowl, mashing with potato masher after each addition of milk mixture. Beat vigorously until fluffy and light. 5. Spray 2-qt casserole with cooking spray. Spoon in potatoes and bake immediately or cover and refrigerate for 24 hours max. Bake at 350 uncovered 40-45 minutes. 6. If bake later - pour reserve milk over potato mixture and bake uncovered for 40-45 minutes at 350 or until hot. Just before serving stir potatoes. Special touch: - sprinkle 1 cup crushed herb seasoned croutons or shredded Parmesan cheese over mashed potatoes or -drizzle basil pesto over potatoes.
