Preheat the oven to 350 degrees F
- Cream Cheese Frosting:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar
- Chopped pecans and fresh raspberries or strawberries, for garnish
Aunt Annie's Soft Pretzels

Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve
- 1 1/2 cup warm water
- 1 1/8 teaspoon active dry yeast
- 2 tablespoons brown sugar
- 1 1/8 teaspoon salt
- 1 cup bread flour
- 3 cups regular flour
- 2 cups Warm water
- 2 tablespoons baking soda
- to taste coarse salt
- 4 tablespoons butter (melted)
Tortellini Soup

1) In a large soup pot, heat the oil over medium-high heat
- 2 T olive oil
- 1 medium onion chopped
- 2 Cans (141/2 oz each) diced tomatoes, undrained
- 2 T balsamic vinegar
- 2 garlic cloves chopped
- 1/4 t dried oregano
- 1/4 t salt
- 1/4 t black pepper
- 4 C water
- 3 cans (101/2 oz each) condensed chicken broth
- 1 pkg (19 oz) frozen or refridgerated cheese tortellini
- 1 pkg (10 oz) frozen spinach thawed and drained
French Onion Soup

Use 50% less sodium beef broth and one medium onion to make 2 servings
- 3 Tablespoons butter
- 3 Large Onions
- 1 Tablespoon Flour
- Fresh Ground Pepper
- 5 Cups of Beef Broth
- 4 Think slices of french or Italian Bread
- 4 Tablespoons grated Parmesan cheese
- 4 Tablespoons grated Swiss Cheese
American Potato Salad

1. Place potatoes in large sauce pan and cover with water by 1 inch
- (3-4) medium russet potatoes, peeled and cut into cubes
- Salt
- 2 Tbs. distilled white vinegar
- 1 medium clery rib, chopped fine (1/2 cup)
- 2 Tbs. minced red onion
- 3 Tbs. sweet pickle relish
- 1/2 cup mayonnaise
- 3/4 tsp. powdered mustard
- 3/4 tsp. celery seed
- 2 Tbs. minced fresh parsley leaves
- 1/4 tsp. black pepper
- 2 large hard boiled eggs
Braised Chicken with Dates and Moroccan Spices

Sprinkle chicken pieces with salt, pepper, and flour
- 3 1/2 * 3 1/2 pounds chicken breast halves, thighs, and drumsticks
- 1 * 1 tablespoon all purpose flour
- 1 * 1 tablespoon extra-virgin olive oil
- 2 * 2 pounds shallots (about 11 large), peeled
- 3 * 3 cinnamon sticks
- 1 1/2 * 1 1/2 teaspoons ground ginger
- 1 * 1 teaspoon ground cumin
- 1/2 * 1/2 teaspoon turmeric
- 1/8 * 1/8 teaspoon cayenne pepper
- 3 * 3 cups low-salt chicken broth
- 5 * 5 tablespoons fresh lemon juice, divided
- 12 * 12 dates, pitted, halved
- 1/4 * 1/4 cup almonds, toasted, coarsely chopped
- 1/4 * 1/4 cup chopped fresh cilantro

1. Heat oven to 375 degrees
- 1 (9-inch) One-Crust Pie Shell
- 2/3 cup Sugar
- 1/3 cup stick Margarine or Butter, melted
- 1 cup Corn Syrup
- 1/2 teaspoon Salt
- 3 Large Eggs
- 1 cup Pecan Halves or broken pecans
- 1 teaspoon Vanilla Extract
Parmesan Risotto

Heat stock in saucepan over medium heat; keep at a low simmer
- 6 to 8 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
- 3 tablespoons olive oil
- 1/2 cup finely chopped shallots, (about 2)
- 1 cup Arborio or Carnaroli rice
- 1/2 cup dry white wine
- 4 to 6 tablespoons unsalted butter
- 1/2 cup grated Parmesan cheese, plus extra for grating or shaving
- 1/4 cup chopped fresh flat-leaf parsley
- Salt and freshly ground black pepper

- 3/4 lb. cooked elbow noodles
- 1 can (12oz) evaporated milk
- 1 egg
- 12 oz + sharp cheddar cheese shredded
- black pepper
- 1 tsp. mustard
- dash of Tabasco to taste
- 1/2 tsp. salt
