Chicken Scarpariello

Heat nonstick 12" skillet or 5-6 qt Dutch oven over medium-high heat until hot
- 1/2 lb hot and/or sweet Italian-sausage links, cut crosswise into 1" pieces
- 3 medium garlic cloves, crushed with side of chef's knife
- 1 large green or red pepper, cut into 1" pieces
- 1 large onion, cut into 1" pieces
- 1 medium sprig fresh rosemary
- 1 tbsp olive or vegetable oil
- 1/2 tsp salt
- 2 c cherry or grape tomatoes
- 1 (2 to 2 1/2 lb) rotisserie chicken, cut into 8 pieces, skin removed if desired
Four Bean Salad

Day before, if desired: Drain beans and place in glass bowl
- 1 3/4 c cold boiled navy beans
- 1 (1 lb) can French-cut green beans
- 1 (1 lb) can yellow wax beans
- 1 (1 lb) can red kidney beans
- 3/4 c minced green pepper
- 1/2 c minced onion
- 1/2 c salad oil
- 1/2 c cider vinegar
- 1/2 - 3/4 c granulated sugar
- 1 tsp salt
- 1/2 tsp pepper
Honey Balls

Add eggs and vanilla to flour
- 6 c flour
- 3/4 tsp salt
- 1 tsp baking powder
- 1 1/2 tsp vanilla
- 11 medium eggs (or 9 large eggs)
- 24 oz honey
- 1/2 to 3/4 c sugar
Senate Bean Soup

In large kettle, cover beans with 6-8 c hot water
- 1 lb dry white navy beans
- 1 meaty ham bone OR 1 1/2 lbs ham hocks
- 1 c chopped onion
- 2 garlic cloves, minced
- 1 c chopped celery
- 2/3 c mashed potato flakes
- 1/4 c chopped parsley
- 1 1/2 tsp salt
- 1 tsp pepper
- 1 tsp nutmeg
- 1 tsp oregano
- 1 tsp basil
- 1 bay leaf
Healthy Green Smoothie

Wash, core, and slice fruit
- organic collard greens, swiss chard, or romaine lettuce
- 1 pear
- 2 apples
- 2 bananas
- strawberries
- blueberries
- 10 - 12 oz water
Magic Marshmallow Crescent Puffs

Preheat oven to 375. In small bowl, combine sugar, flour, and cinnamon
- 1/4 c sugar
- 2 tbsp flour
- 1 tsp cinnamon
- 2 (8 oz) cans Pillsbury crescent rolls
- 16 large marshmallows
- 1/4 c margarine or butter, melted
- GLAZE
- 1/2 c powdered sugar
- 1/2 tsp vanilla
- 2 to 3 tsp milk
- 1/4 c chopped nuts (optional)
Easy Baked Beans

Preheat oven to 325 or 350
- 2 (1 lb each) cans pork and beans
- 1/2 c diced bacon
- 1/2 c brown sugar
- 2 tbsp ketchup
- 1 tsp prepared mustard
- 3 tbsp dark molasses
- 1/2 tsp onion salt OR small onion, diced
The Perfect Coffee Cake

Preheat oven to 350. Grease 12 cup fluted baking pan
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 3/4 tsp salt
- 3 c + 1 tbsp all-purpose flour
- 3/4 c chopped pecans
- 1/3 c packed brown sugar
- 1 1/4 tsp ground cinnamon
- 1 1/2 c granulated sugar
- 3/4 c butter or margarine (1 1/2 sticks), softened
- 2 1/2 tsp vanilla extract
- 3 large eggs
- 1 container (16 oz) sour cream
- 1 c confectioner's sugar
- 4 to 6 tsp milk

- 1 tbsp water
- 1 1/2 tsp onion powder
- 1/2 tsp basil leaves

- 1 (12 oz) pkg chocolate chips
- 1/4 c butter or margarine
- 1 (14 oz) can sweetened condensed milk
- 2 c flour
- 1/2 c finely chopped nuts (optional)
- 1 tsp vanilla
- Hershey kisses("Truffle" type work best)
- 2 oz white chocolate baking bar or vanilla candy coating
- 1 tsp shortening (if using baking bar)
