Tortilla Espanola

Preheat oven to 375. Heat 2 tbsp olive oil in 10 1/2" cast-iron skillet
- 2 tbsp olive oil
- 6 medium potatoes, peeled and thinly sliced (about 2 lbs)
- 1 large onion, finely chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 6 large eggs

Sweet Potato and Pear Gratin

Boil potatoes in a large pot with water to cover 20-25 minutes until firm-tender
- 3 lb medium sweet potatoes
- 3 tbsp stick butter
- 2 tsp grated peeled ginger
- 1/3 c maple or pancake syrup
- 1 tsp grated lemon zest
- 1/2 tsp salt
- 3 firm-ripe Anjou pears (1 1/4 lb), peeled, halved, cored and sliced crosswise 1/4" thick

- 1 1/3 c 10X sugar

- 2 c powdered sugar

Elegant Fudge Frosting

Combine sugar, coffee, and cream in small but deep, heavy pot
- 1 1/4 c sugar
- 1 tsp vanilla
- 2 tbsp instant coffee granules
- 1 c heavy cream
- 5 oz unsweetened chocolate, finely chopped
- 1/2 c unsalted butter
White Peanut Butter Fudge

Heat milk, sugar, and butter to a boil
- 1 can evaporated milk (5 1/3 oz)
- 1 lb confectioner's sugar
- 4 tbsp butter
- 12 oz jar peanut butter
- 1 small jar marshmallow
- 1 tsp vanilla

Gail's Creamy Fudge

Boil sugar and milk. Add butter and boil 10 minutes, stirring constantly
- 4 c sugar
- 1 can evaporated milk (13 oz)
- 1 pint marshmallow cream (16 oz)
- 3 (6 oz each) pkg chocolate chips
- 1 jar nutmeat
- 1/4 lb butter
Sugar and Spice Cookies

- 3/4 c shortening
- 1 c sugar

- 1/4 c molasses

- 2 tsp soda
- 1/4 tsp salt

- 3/4 tsp cloves
- 3/4 tsp ginger
