Sweet and Sour Sauce

Mix all but corn starch in saucepan
- 1/2 cup ketchup
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/2 tsp salt
- 1 tsp dry mustard
- 1 tsp worscestersire
- 1/4 tsp pepper
- 1 tsp corn starch
Chicken Carbonara

Heat the oil in a heavy large frying pan over medium heat
- 2 teaspoons olive oil
- 4 ounces thinly sliced pancetta, chopped
- 2 teaspoons minced garlic
- 2 1/2 cups whipping cream
- 1 cup freshly grated Parmesan
- 8 large egg yolks
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh Italian parsley leaves
- Salt
- 1 pound spaghetti
- 4 cups coarsely shredded chicken (from 1 roasted chicken)
- Freshly ground black pepper
- 1/2 cup chopped walnuts, toasted
- 1 tablespoon finely grated lemon peel
Short Rib osso Buco with Polenta Crust

Preheat an oven to 350ºF
- 6 lb. bone-in beef short ribs
- Salt and freshly ground pepper, to taste
- 1/2 cup all-purpose flour
- 1 Tbs. olive oil, plus more as needed
- 3 yellow onions, diced
- 3 carrots, peeled and diced
- 4 garlic cloves, minced
- 1/2 cup red wine
- 1 1/2 Tbs. veal demi-glace
- 1 1/2 cans (each 14 oz.) diced tomatoes, drained
- 2 1/2 cups chicken stock
- 2 1/2 cups beef stock
- 1 bay leaf
- 3 or 4 large fresh thyme sprigs
- 2 cups polenta
- 1/2 cup grated Parmigiano-Reggiano cheese
- 2 Tbs. unsalted butter, plus 1 Tbs. melted butter
Hawaiian Meatballs

Combine beef/trkey, bread crumbs, salt and milk
- 1.5 ibs of ground turkey or beef
- 1/3 cup bread crumbs
- 1/2 cup evaporated milk (regular milk can work as well)
- 1 1/4 tsp salt
- 1 16 oz can of pineapple chunks
- 1 cup dices red pepper
- 2 tbsp cornstarch
- 1/4 cup brown sugar
- 1/4 cup vinegar
- 2 tbsp soy sauce
Butternut Squash Mac'n Cheese

Cook pasta in salted water, then drain While pasta cooks, heat medium pan over medium heat
- 1 pound macaroni
- 1 tbsp olive oil
- 2 tbsp butter
- 1/2 medium onion
- 2 tbsp chopped fresh thyme
- 3 tbsp flour
- 2 cups chicken stock
- 1 (10 oz) box frozen, cooked butternut squash, defrosted
- 1 cup cream or half and half
- 2 cups sharp cheddar, grated
- 1/2 cup grated parm-reggiano
- 1/4 tsp ground nutmeg
- black pepper

- 1 1/2 cups flour
- 1/2 cup sugar
- 3/4 tsp baking powder
- 1/2 cup butter, cold
