Chunky Banana Bran Muffins

Preheat the oven to 350 degrees F
- 1 cup unprocessed wheat bran
- 1 cup buttermilk (shaken)
- 4 tablespoons unsalted butter, at room temperature
- 1/4 cup light brown sugar, lightly packed
- 2 extra-large eggs, at room temperature
- 6 tablespoons unsulphured molasses (I substituted 3/4 cup brown sugar)
- 1 teaspoon grated orange zest
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup raisins
- 1 cup large-diced bananas
- 1/2 cup chopped walnuts
Fruit Crunch Sundae

Preheat the oven to 350 degrees F
- 1 cup quick-cooking (not instant) rolled oats
- 1/2 cup sweetened, shredded coconut
- 1/2 cup sliced or slivered almonds
- 3 tablespoons vegetable oil
- 2 tablespoons good honey
- 8 to 10 strawberries, small-diced
- 1/2 cup blueberries
- 1/4 pineapple, small-diced
- 2 cups plain yogurt

Pre-heat oven to 350. Melt chocolate and butter together in medium saucepan
- 2 squares unsweetened chocolate
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 3/4 cup flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup semi-sweet chocolate chips

In the bowl of an electric mixer fitted with the flat beater, beat together the flour, salt and the 2 Tbs
- For the crust:
- 2 1/2 cups all-purpose flour
- 1 tsp. salt
- 2 Tbs. granulated sugar
- 16 Tbs. (2 sticks) cold unsalted butter, cut into 1/2-inch dice
- 6 to 8 Tbs. ice water
- For the apple-cranberry filling:
- 1 1/2 lb. Pink Lady or McIntosh apples, peeled, cored and cut into 1/2-inch dice
- 1/3 cup firmly packed light brown sugar
- 1 tsp. vanilla extract
- 1/4 tsp. ground cinnamon
- 1/8 tsp. salt
- 1/8 tsp. freshly grated nutmeg
- 2 tsp. cornstarch
- 2 Tbs. unsalted butter
- 1 1/2 tsp. fresh lemon juice
- 5 oz. fresh cranberries
- 1/4 cup granulated sugar
- 2 Tbs. water
- 1 egg, lightly beaten with 1 tsp. water
- Granulated sugar for sprinkling

- Hot Buttered Rum Batter:
- 1 cup butter, softened
- 1 cup plus 2 tbsp brown sugar
- 1 cup heavy cream
- 2 cups icing sugar
- 1/8 tsp ground cloves
- 1/8 tsp cinnamon
- 1/4 tsp nutmeg
- Have ready at serving time:
- 2 tbsp rum
- 1/2 cup boiling water
