Bring a large pot of water to a boil
- Kosher salt
- 12 oz. egg tagliatelle or fettuccine (preferably fresh)
- 2 Tbsp. (1/4 stick) unsalted butter
- 2 oz. thinly sliced prosciutto, torn into 1" pieces
- Zest and juice of 1 orange
- 1/2 cup heavy whipping cream
- Freshly ground black pepper
- 1/4 cup finely grated Parmesan

- 2 medium carrots, thinly diagonally sliced
- 1 medium onion, chopped
- 1 medium red potato, cut in 1-inch pieces
- 1/2 cup fresh green beans, cut in 1-inch pieces
- 1/2 cup pitted ripe olives, halved
- 1 cup reduced-sodium chicken broth
- 1/2 cup dry white wine or chicken broth
- 2 Tbsp. quick-cooking tapioca
- 1 tsp. herbes de Provence or dried Italian seasoning, crushed
- 3/4 tsp. dried thyme, crushed
- 1/4 tsp. coarsely ground black pepper
- 8 skinless, boneless chicken thighs (1-3/4 to 2 lb. total)
- 1/2 tsp. seasoned salt
- 1 14-oz. jar tomato pasta sauce or one 16-oz. jar Alfredo pasta sauce

Rolled Flank Steak

Preheat an oven to 350°F
- 1 1/2 cups fresh bread crumbs
- 3 1/2 to 4 1/2 Tbs. olive oil
- Kosher salt, to taste, plus 1 Tbs.
- Freshly ground pepper, to taste
- 1 lb. baby spinach
- 1 Tbs. roasted garlic
- 1 flank steak, 1 1/2 to 2 lb., butterflied and pounded to an even thickness
- 1 1/2 Tbs. plus 1 tsp. ras el hanout
- 4 leeks, cut into 1/4-inch rounds

- 2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
- 1 tablespoon olive oil
- 4 tablespoons butter
- 3 cups sliced mushrooms (cremini, oyster, shiitake)
- 3/4 cup Marsala
- 1 cup chicken stock
- Salt and freshly ground black pepper
- Chopped chives, for garnish
