Classic Vanilla Bean Brûlée

- 2 3/4 cups whipping cream
- 1 vanilla bean OR 1 Tbsp vanilla bean paste
- 4 large egg yolks
- 1 large whole egg
- 3/4 cup sugar, plus extra for the brûlée
Pumpkin Pudding

In large bowl mix pumpkin, spice and milk, then add pudding mix stirring well
- 1 lrg box vanilla instant pudding
- 1 1/2 cups canned mashed pumpkin
- 2 cups milk
- 1/2 tsp pumpkin pie mix
Cream Filled Cupcakes

Preheat oven to 375. In mixing bowl combine first 5 ingredients
- Filling:
- 3 cups flour
- 2 cups sugar
- 1/3 cup cocoa
- 2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup milk
- 1 cup oil
- 1 cup water
- 1 tsp vailla
- 1/4 cup butter
- 1/4 cup shortening
- 2 cups icing sugar
- 3 tbsp milk
- 1 tsp vanilla
- pinch salt
- Chocolate frosting
Berry Pudding Parfaits

Make pudding as per package directions
- 1 pkg vanilla pudding mix
- 3 cups milk
- 2 cups berries, washed and sliced if necessary
- 24 nilla wafers ( or vanilla cookies)
Rigatoni with Mushroom Ragu

Bring a large pot of water to a boil over high heat
- 1/2 oz. dried porcini mushrooms
- 2 Tbs. unsalted butter
- 3 Tbs. olive oil
- 4 large garlic cloves, minced
- 1 fresh rosemary sprig, 4 inches long
- 1 small yellow onion, finely chopped
- 1/2 lb. mixed fresh mushrooms, such as
- shiitake, oyster, chanterelle and cremini,
- thinly sliced
- 1/2 cup dry red wine
- 3 Tbs. tomato paste
- 1 cup chicken or beef stock
- Salt and freshly ground pepper, to taste
- 1 lb. rigatoni
Rhubarb Strawberry Cake

Cut rhubarb into bottom of pan
- 3/4 cup sugar
- small pkg of strawberry jello
- box of white cake mix
- rhubarb
- 1 cup warm water
- 1 cup melted butter
Peanutty Crispy Dessert Cups

- 1/2 cup creamy peanut butter
- 2 tbsp butter
- 3 cups large marshmallows
- 3 cups chocolate-flavored rice crispy cereal

Penne alla Vodka

Peel and seed the tomatoes, then cut them into small dice
- 5 large tomatoes
- 1/3 cup extra-virgin olive oil
- 2 garlic cloves, very thinly sliced
- 1/4 cup vodka
- Salt and freshly ground black pepper, to taste
- Pinch of red pepper flakes
- 1 lb. penne
- 1/2 cup heavy cream
- Leaves from 3 or 4 large fresh flat-leaf parsley

Creamy Potato and Fennel Gratin

Preheat the oven to 350 degrees F
- 2 small fennel bulbs
- 1 yellow onion, thinly sliced
- 2 tablespoons good olive oil
- 1 tablespoon unsalted butter
- 2 pounds russet potatoes (4 large potatoes)
- 2 cups plus 2 tablespoons heavy cream
- 2 1/2 cups grated Gruyère cheese (1/2 pound)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Shrimp Bisque

1Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes
- 1 lb large shrimp, peeled and deveined, shells reserved
- 4 cups seafood stock
- 3 tablespoons olive oil
- 2 cups chopped leeks, white and light green parts (3 leeks)
- 1 tablespoon chopped garlic (3 cloves)
- 1 pinch cayenne pepper
- 1/4 cup cognac or 1/4 cup brandy
- 1/4 cup dry sherry
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 1/3 cup tomato paste
- 2 teaspoons kosher salt
- 1 teaspoon fresh ground black pepper
