For coating: Combine the coating ingredients on a plate and mix with your fingers

- 1/2 cup fine dry plain bread crumbs
- 1/4 cup grated Parmigiano Reggiano Cheese
- 1/2 tsp kosher salt

- 2 cans canned pumpkin not pie filling

- 1/2 cup orange juice
- 1/3 cup canola or sunflower oil
- 1/3 cup honey
- 5 cups cooked quinoa
- 2 apples cored and chopped
- 1 bell pepper diced small
- 1 cup fresh corn kernels
- 1/2 cup dried cranberries
- 1/2 cup currants
- 1 small red onion finely chopped
- 1 cup toasted chopped pecans
- 1 cup fresh parsley and mint chopped
- sea salt and freshly round pepper

- 1 pkg Johnson spicy sausage meat cooked and well drained
- 1 pkg John mild sausage meat cooked and well drained
- 1 1/2 cups sharp grated cheddar cheese
- 1 1/2 cups grated monterey cheese
- 1 pkg hidden valley ranch dressing prepared
- 1 sm can black olives finely chopped
- 1/2 cup diced red pepper
