Penny's Beer Salsa

Phase 1 Blanch tomatoes for 40-60 secs and put into ice cold water
- 15 lbs slightly under-ripe tomatoes(approx 35 medium size)
- 20 assorted large hot peppers ie. crimson hot,thick red
- 4-8 jalapeno peppers
- 2 large green peppers
- 2-3 large white onions
- 13 oz tomato paste
- 3-12 oz Beer
- 1/2 cup pickling salt
- 2 cups vinegar
- 2 TBSP sugar
- Unsalted nacho chips
- 2-3 cups canned corn
10 Minute Tiramisu

- 1 cup 35 % cream
- 3 Tbsp sugar
- 2 Tbsp coffee liqueur

- 4 egg whites, stiffly beaten
Flank Steak

Mix all ingrediants and marinate steaks over night Bar-b-que till desired cooking Slice thinly and serve ontop of
- 3 Tbsp maple syrup
- salt
- 1/2 cup canola oil

- 4 Tbsp honey
- 3 garlic cloves
- 1 Tbsp rosemary

- 2 Tbsp cidar vinegar

Parmesan Baked Salmon

Preheat oven to 400. Mix dressing, cheese and pepper until well blended
- 1/2 cup fat free mayo
- 4 Tbsp grated parmesan
- 1/4 tsp cayenne pepper
- 2 lb salmon
- 4 tsp lemon juice
- 15-20 ritz crackers crushed(about 1 cup)

Combine first 6 ingrediants in mixing bowl
- 2 1/2 Cup flour
- 1 cup oats
- 1 cup natural bran
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup oil
- 2/3 cup brown sugar
- 2 eggs
- 2 cups mashed bananas
- 1 cup buttermilk
- 4 Tbsp molasses
- 1 1/2 cup raisins
Niagara Bouillabaisse

Seafood Broth Heat a large pot over medium heat; add olive oil and butter
- Seafood Broth
- 2 Tbsp (25ml) olive oil
- 2 Tbsp butter
- 1/2 onion finely chopped
- 3 garlic cloves finely chopped
- 1 bottle(750 ml) dry white wine (Chardonnay)
- 24 tightly closed frest little-neck clams,scrubbed
- 2 sprigs thyme
- 24 tightly closed fresh mussels, scrubbed
- Bouillabaisse
- 1/4 cup (50ml) diced pancetta
- 2 Tbsp olive oil
- 1/2 cup(125ml)eached chopped onion and diced celery
- 1/4 fennel bulb, finely chopped
- 1 cup (250ml) seeded cored and chopped tomatoes
- 3 sprigs thyme,leaves picked off and finely chopped
- 1 tsp (5ml) tomato paste
- Pinch cayenne (optional)
- 2 cups diced scrubbed potatoes
- 1 lb (500g) boneless skinless whitefish fillets cut into 1-inch pieces
- Salt and pepper to taste
- Chervil, dill and chives for garnish
