Shrimp and Feta Cheese Sauce with Pasta

TO PREPARE: In a large bowl, combine the shrimp, cheese, onions, oregano, tomatoes, olives and salt and pepper
- 1/2 -1/2 pounds medium shrimp, cooked, shelled and deveined
- 1-1/4 pounds Feta cheese, rinsed, patted dry and crumbled
- 4 to 6 whole green onions, chopped
- 2 Tablespoons fresh minced oregano
- (2-1/4 teaspoons dried oregano)
- 4 to 5 tomatoes, peeled, cored, seeded and chopped
- 10 to 12 pitted black olives, sliced or chopped
- Salt to taste (be careful as Feta cheese is salty)
- Fresh ground pepper to taste
- 10 ounce package pasta
Lasagna

Brown beef slowly, spoon off excess grease; add next 4 ingredients
- 1 lb. ground beef
- 1 #2-1/2 can tomatoes (3-1/2 cups)
- 1 8-oz can tomato sauce
- 1-2 pkgs. of spaghetti sauce mix
- 2 cloves of garlic (minced)
- 6-7 noodles (about ½ lb. lasagna noodles)
- 6 or 8 oz. mozzarella cheese
- 1 cup cream style cottage cheese
- ½ c. grated Parmesan cheese
Johnny Mazetti (from the Panama Canal)

Cook 1-1/2” wide noodles with garlic cloves
- 1 lb. green peppers
- 1 lb. onions
- some celery
- Chop and fry together with 2 lbs. hamburger. Pour in liquid and mushrooms from a can. Add: 1 can tomato paste
- 1 can tomato soup
- 1 can hot enchilada sauce
- 1 can mild enchilada sauce
- 1 bottle of stuffed olives.
French Bread

Knead well. Let double in size (about one hour
- 2 c. water—good and warm
- 2 T melted margarine
- 1-1/2 T sugar
- 1 T salt
- Mix above ingredients well.
- Add 1 T yeast and let sit for 10 minutes
- Add enough flour to make a firm, not sticky dough (about 6 cups).
Savory Pepper Steak

Combine flour, salt, and pepper and coat steak strips
- 1-1/2 lbs. round steak, cut 1/2” thick
- ¼ c. flour
- ½ t. salt
- 1/8 t. pepper
- ¼ c. cooking oil
- 1 cup tomatoes
- 1-3/4 c. water
- ½ c. chopped onion
- 1 small clove garlic, minced
- 1 T. beef flavor gravy base
- 1-1/2 t. worchestershire sauce
- 2 large green peppers, cut in strips
- Hot, cooked rice
COLE SLAW

- 1 medium-sized head green cabbage
- 2 carrots, thinly shredded
- 1 onion
- 1 green pepper
- 1 c. sugar
- 1 c. vinegar
- 1 tsp. salt
- 1 tablespoon grated horseradish
- 1 tsp. mustard seed
- 1 tsp. celery seed
- 1 tsp. turmeric
APPLE - CINNAMON PANCAKES

- 1 c. pancake mix (12 to 14 pancakes)
- 1 c. milk
- 1 egg
- 1 tsp. cinnamon
- 1/2 c. peeled apples
- 1 tbsp. vegetable oil
- 1/4 tsp. vanilla extract
Chili (Mom’s)

Soak beans overnight or bring to a boil and soak at least an hour
- 1 # small red beans
- 1 lb. hamburger
- 1 onion
- 2 garlic cloves
- Chili powder to taste
- 2 shakes oregano
Almond Cookie

- 1/2 cup plus 3 tablespoons sugar, divided
- 1/4 cup packed brown sugar
- 1 egg
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 3 tablespoons sliced almonds
Carma's Sugar Cookies

- 1/4 t. salt
- 1 c. powdered sugar
- 1 c. white sugar
- 1 c. real butter
- 1 c. oil
- 2 eggs, beaten
- 2 t. vanilla
- 5 c. flour
- 1 t. baking soda
- 1 tsp. crème of tartar
