BARBECUED CHICKEN BREAST

- MARINADE:
- 4 whole chicken breasts, halved
- 4 tbsp. oil
- 1 tbsp. brown sugar
- 1 tsp. dried thyme or basil leaves
- Dash pepper
- 2 tbsp. lemon juice
- 2 cloves garlic, minced or pressed
- 3 whole cloves
SOUR CREAM CUCUMBERS

- 1 tbsp. sugar
- 1 c. sour cream
- 2 tbsp. vinegar
- 1 1/2 tsp. salt
- Cucumbers and onions
- Mix sugar, sour cream, vinegar and salt together.
Irish Soda Bread

Preheat oven to 325. Grease 9x5 inch loaf pan Combine flour, baking powder, sugar, salt and baking soda
- 3 c. flour
- 1 T Baking powder
- 1/3 c. white sugar
- 1 t. salt
- 1 t. baking soda
- 1 egg lightly beaten
- 2 c. buttermilk
- 1/4 c. butter
Pie Crust

- Cut together: 4 c. flour, 1-1/2 c. shortening. Add and stir in 1 T sugar; 1 tsp. salt; 1 tsp. baking powder; 1 egg (beaten); ½ c. water; 1 tsp. vinegar.
CUCUMBERS IN SOUR CREAM 2

- 4 c. cucumbers, thinly sliced
- 1 1/2 tsp. salt
- 3/4 c. vinegar
- 3/4 c. water
- 1 c. sour cream or lite version
- 1 tsp. fresh dill weed, chopped or 1/4 tsp. dried dill weed
- 1 tsp. sugar
- Dash pepper
- Optional: thinly sliced onion rings can be added with sour cream
Mint Brownies

- Layer 1: Brownies
- 1 cup sugar
- 1 stick oleo (Imperial works well)
- 4 eggs
- 1 16-oz can Hersheys syrup
- 1 cup flour
- ½ tsp. baking powder
- Mix and spread in 9” x 13” pan. Bake 25-30 min. at 325. Refrigerate until cool.
- Layer 2: Mint
- 1 stick oleo
- 2 cups powdered sugar
- 2 Tbsp. Milk
- 1 tsp. Peppermint extract
- green food coloring
- Mix with beater and spread on cool brownies.
Apple Doughnuts

- 5 c. flour ¼ c. shortening
- 4 t. baking powder 1 ½ c. sugar
- 1 t. baking soda 3 eggs
- 2 t. salt 1 c. grated raw apple
- 1 t. nutmeg ½ c. buttermilk
- 1 t. cinnamon 1 t. vanilla
- ¼ t. mace Vegetable oil

Saute the onion in the butter in a skillet over medium heat until browned
- 1/2 cup chopped onion
- 1/4 cup (1/2 stick) butter or margarine
- 1 (8-ounce) can diced green chiles, drained
- 6 ounces cream cheese, softened
- 2 Tablespoons milk
- 1/2 teaspoon cumin
- 4 cups chopped cooked chicken
- 12 (7-inch) flour tortillas
- 1 (10-ounce) can cream of chicken soup
- 1 cup sour cream
- 1 cup milk
- 3/4 cup shredded Monterey Jack cheese or Cheddar cheese

1. In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 3 tablespoons balsamic vinegar
- 1 teaspoon grated fresh ginger root
- 1 clove garlic, crushed or to taste
- 2 teaspoons olive oil
- 4 (6 ounce) mahi mahi fillets
- salt and pepper to taste
- 1 tablespoon vegetable oil
