Rhubarb Cake

- Ingredients:
- 1 1/2 cup raw Rhubarb cut fine
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 cup butter or margarine
- 1 cup applesauce
- 1/2 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon vanilla
- 2 cups flour
- ***Topping***
- 1/4 cup sugar mixed with
- 1 teaspoon cinnamon
Uncle Click’s Spaghetti Sauce

Can add 1 can mushrooms, with or without the liquid, depending on whether or not you need it
- Brown 2-1/2 – 3 lbs. Pork shoulder steak (cut into bite size
- pieces) with bones and all.
- Cook ½ hour (trim some, not all fat) Drain off all fat. Add one
- smallish onion, chopped, and 1 clove garlic in bag or 1 t. garlic salt.
- Add three 15-oz cans tomato sauce and two l-lb, 12 oz cans
- tomatoes, 1 T. seasoning salt, 1 t. oregano, salt and pepper
- and 1 t. parsley. Simmer 6-8 hours.
Chicken with Balsamic Vinegar and Mushrooms

Rinse the chicken and pat dry
- 6 boneless skinless chicken breast halves
- 2 Tablespoons flour
- Ground pepper to taste
- 1 Tablespoon olive oil
- 16 ounces assorted mushrooms, chopped
- 2 shallots, minced
- 1 cup chicken broth
- 1/4 cup balsamic vinegar
- 1/4 cup white wine
- 1/4 teaspoon thyme
- 1 bay leaf
Fudge-Filled Bars

- 1 Yellow Cake Mix 1 Cup Chocolate Chips
- 2 Eggs 1 Can Sweetened Condensed Milk
- ½ Cup (1 stick) Melted butter plus 2 Tblsp.
Mom’s Turkey Dressing

Melt butter and cook onions and celery until tender
- 2 loaves day old bread, cut up
- 1 cup margarine
- 2 onions, chopped up
- 4-6 large stalks celery
- 2 t. sage
- 2 t. poultry seasoning
- 3 t. salt
- ½ t. pepper
Rhubarb Crisp

- 1 Cup flour 4 Cups diced rhubarb
- ¾ Cup oatmeal 1 Cup white sugar
- 1 Cup brown sugar 2 ½ Tbsp cornstarch
- 1 tsp cinnamon 1 Cup water
- ½ Cup melted butter or margarine 1 tsp vanilla

- 3 cups flour 3 eggs, unbeaten, room temperature
- 3 t. baking powder 1 t. vanilla
- ¼ t. salt 1 t. almond flavoring
- ½ c. margarine ½ t. anise flavoring
- 1-1/3 c. sugar 1 c. chopped almonds
Oven-Fried Oysters

In a shallow bowl, combine the flour, salt and pepper
- Jalapeno Mayonnaise:
- 3/4 c. flour
- 1/8 t. salt
- 1/8 .t pepper
- 2 eggs
- 1 cup dry bread crumbs
- 2/3 c. grated Romano cheese
- 1/4 c. minced fresh parsley
- 1/2 t. garlic salt
- 1 pint shucked oysters or 2 cans (8 oz. each) whole oysters, drained
- 1/4 c. mayonnaise
- 1/4 x. sour cream
- 2 medium jalapeno peppers, seeded and finely chopped
- 2 T milk
- 1 t. lemon juice
- 1/4 t. grated lemon peel
- 1/8 t. salt
- 1/8 t. pepper
