Butter Pecan Cake

This sweet, delicious cake is one that my family’s enjoyed for many years
- Frosting:
- 2 2/3 cups chopped pecans
- 1 ¼ cups butter, softened, divided
- 2 cups sugar
- 4 eggs
- 3 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
- 2 tsp vanilla extract
- 1 cup butter, softened
- 8 to 8 ½ cups confectioners’ sugar
- 1 can (5 oz) evaporated milk
- 2 tsp vanilla extract
Chunky Applesauce

Apple sauce is so easy to make so forget buying it in the grocery store
- 1 medium tart apple, peeled and chopped
- 1/2 cup applesauce
- 3/4 teaspoon ground cinnamon, divided
- Dash ground nutmeg
- 1 tube (7-1/2 ounces) refrigerated biscuits
- 1 tablespoon butter, melted
- 2 tablespoons sugar

- 1 boneless pork shoulder roast (6 pounds)

- 2 cups reduced-sodium chicken broth
- 1/2 cup sugar
- 1/2 cup cider vinegar
- 1/2 cup reduced-sodium soy sauce
- 2 celery ribs, finely chopped
- 4 teaspoons dried minced onion
- 4 teaspoons ground mustard
- 4 teaspoons paprika
- 30 sandwich rolls, split

- 1/4 cup chili sauce ( I prefer Heinz. DO NOT substitute Thai Chili Sauce)

- 1/2 teaspoon garlic powder
- 2 teaspoons Worcestershire sauce
- 1 teaspoon ground black pepper
- 1/4 teaspoon Tabasco sauce

- 0.5 (6 ounce) can tomato paste

- 1/2 cup onion, diced small
- 1 garlic clove, minced
- 0.5 (4 ounce) can diced green chilies
- 1 dash pepper
- 1 dash red pepper flakes
- cilantro or parsley, for color
