- 1 ounce gin, such as Plymouth
- 3/4 ounce hibiscus tea
- 3/4 ounce Simple Syrup, recipe follows
- 1/2 ounce lemon juice
- Lime wedge, for garnish
- 1 cup sugar
Sweet Potato-Beet Hash

Preheat the oven to 400 degrees F
- 1 large sweet potato, peeled and cut into 1/4-inch dice
- 2 large fresh beet, peeled and cut into 1/4-inch dice (I dice mine smaller than the potato so it softens)
- 1 tablespoon olive oil
- kosher salt (I do not use the salt, for medical reasons)
- fresh ground black pepper
- 1 slice bacon, cut into lardons (I use 2 slices of low-sodium bacon, for medical reasons)
- 1 small onion, diced

Combine salt, sugar, and hot water, stirring to dissolve
- 1/2 c kosher or sea salt (cut in half if using regular table salt)

Quick Queso

Combine all of the ingredients in a bowl, then use a fork to gently but thoroughly combine
- 2 oz. (1/2 c.) packed shredded Cheddar
- 2 oz. (1/2 c.) packed shredded Pepperjack cheese

- 1/3 c. very finely chopped red pepper
