Spicy Quinoa Tacos

Heat oil in medium saucepan over medium heat
- 1 Tbs. olive oil
- 1 small onion, diced (1 cup)
- 1 rib celery, diced (1/2 cup)
- 1 clove garlic, minced (1 tsp.)
- 1 Tbs. ground cumin
- 1 Tbs. chili powder
- 1/2 tsp. cayenne pepper
- 1 15-oz. can fire-roasted diced tomatoes
- 1 15-oz. can diced tomatoes with green chiles
- 1 cup quinoa, rinsed and drained
- 2 medium carrots, diced (1 cup)
- 1 cup low-sodium vegetable broth
- 1 15-oz. can black beans, rinsed and drained
- 1 cup fresh or thawed frozen corn kernels
- 12 6-inch corn tortillas
Banana Honey smoothie

Coconut-choco Delights

In a large bowl, beat cream cheese until smooth
- 1 package (8 ounces) cream cheese, softened
- 1 package (15-1/2 ounces) Oreo cookies
- 1 package (14 ounces) flaked coconut
- 2 cups sliced almonds
- 2 teaspoons vanilla extract
- 3-1/2 cups semisweet chocolate chips
- 2 tablespoons plus 1-1/2 teaspoons shortening
Individual Fruit Pizzas

For the cookie crust: Preheat the oven to 350 degrees F
- Cookie Crust:
- 1 1/3 cups butter
- 1 1/2 cups sugar
- 1 teaspoon orange zest
- 1 teaspoon vanilla extract
- 2 whole eggs
- 3 tablespoons whole milk
- 4 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- Topping:
- One 13-ounce jar marshmallow creme, such as Marshmallow Fluff

Grilled Cobb Wedge

Cook the bacon slices in a medium skillet until crisp
- Perfect Soft-Boiled "6 Minute" Eggs:
- 6 thick-cut (1/4-inch) slices bacon
- 3 tablespoons olive oil, plus more for drizzling
- 8 cherry tomatoes, halved
- 2 leaves fresh basil, thinly sliced
- 1 small clove garlic, minced
- Kosher salt and freshly ground black pepper
- 1 head iceberg lettuce
- 1 teaspoon paprika (preferably smoked)

- 1 pound Yukon Gold potatoes (about 3 large), large dice
- 1 pound carrots (about 4 to 5 medium), peeled and large dice
