Chayote Ratatouille and Red Beans

1 Heat oil in large saucepan or Dutch oven over medium heat
- 3 Tbs. olive oil
- 2 small onions, quartered and thinly sliced (2 cups)
- 2 small red, orange, or yellow bell peppers, cut into thin 1 1/2-inch-long strips
- 1 large fennel bulb, trimmed, cut into eighths, and thinly sliced (2 cups)
- 3 cloves garlic, minced (1 Tbs.)
- 4 chayotes, peeled and cut into 1-inch chunks (8 cups)
- 2 15-oz. cans chopped tomatoes
- 4 sprigs fresh thyme
- 4 sprigs fresh oregano
- 2 bay leaves
- 1/2 tsp. harissa paste, optional
- 1 1/2 cups cooked kidney beans, or one 15-oz. can kidney beans, rinsed and drained

Beat Crisco, sugar, vanilla, and salt until smooth
- 1 cup Crisco shortening
- 2 cups sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 6 eggs (room temperature)
- 2 cups flour
- 6 ounces semi-sweet chocolate chips (about one small bag)
- 1 cup walnuts (chopped)
Black Bean Veggie Burger with Couscous

- 1 cup(s) couscous
- 3 tablespoon(s) olive oil
- 1 medium red onion, finely chopped
- 2 clove(s) garlic, finely chopped

Green Quinoa Salad with Peas

1 | Bring large pot of salted water to a boil
- 1 cup uncooked quinoa, rinsed and drained
- 3 Tbs. olive oil
- 1 Tbs. plus 1 tsp. fresh lime juice
- 1 tsp. grated lime zest
- 2 tsp. pure maple syrup
- 2 cloves garlic, minced (2 tsp.)
- 1 tsp. ground coriander
- 1 avocado, finely diced (1/2 cup)
- 1 cup cooked fresh or thawed frozen peas
- 4 green onions, thinly sliced (1/2 cup)
- 1/2 cup chopped fresh parsley, plus sprigs for garnish
- 1/4 cup chopped cilantro, plus sprigs for garnish

Honey Orange Cornish Hens

Place OJ, honey, soy sauce, garlic and vinegar together in a plastic bag-add hens and seal
- 3 game hens, halved lengthwise, about 4 3/4 lbs
- 3/4 cup orange juice
- 3/4 cup honey
- 3 tablespoons soy sauce
- 3 cloves minced garlic
- 1 tablespoon cider vinegar
Cold Oven Breakfast Popovers

- 1 tablespoon melted butter or 1 tablespoon canola oil
- Vegetable oil spray
- 3 eggs
- 1 cup milk, preferably whole
- 1 teaspoon vanilla or vanilla paste

- 3/4 cup granulated sugar

- 1 teaspoon vanilla extract
- 2 eggs
- 2-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 1 cup chopped nuts (optional)
Forgotten Cookies

- 2 large egg whites, room temperature
- 1/8 teaspoon salt
- 2/3 cup granulated sugar
- 1 teaspoon pure vanilla extract (or almond extract if desired as substitution)
- 1 cup semisweet chocolate chips
- (Or ½ cup chocolate chips and ½ cup chopped walnuts or pecans as an option)
