These rich and velvety chocolate fudge cookies have the most amazing soft chewy texture
- 1 can of adzuki beans, drained and rinsed (lentils or black beans work well also)
- 2 tbsp water
- 3 tbsp extra virgin coconut oil
- 5 tbsp organic nut butter
- 6 tbsp honey
- 1 1/2 tsp vanilla extract
- 5 tbsp cacao powder (or cocoa)
- 1 tsp baking soda
- a pinch of salt
