Chicken and Wild Rice

Combine chicken, soup and 1/2 cup orange juice
- 4 cups cooked chicken, cut into bite sized cubes
- 1 can cream of chicken soup
- 1 cup orange juice, divided
- 1 package Uncle Ben's long grain and wild rice
- 1 medium onion, chopped
- 1/2 pound sliced mushrooms
- 1 tbsp. butter
- toasted slivered almonds
Skillet Chicken Parmagiana

Dip chicken breasts in milk and then coat in bread crumbs
- boneless skinless chicken breasts
- milk
- fine bread crumbs
- bottled Ragu or other pasta sauce
- mozza cheese
Chicken Chow Mein

Boil noodles for 3 minutes - drain
- 1 pkg. steamed noodles
- 4 tbsp. oil
- 1 cup chopped raw chicken
- 1 cup onion, diced
- 2 cups celery, sliced
- 3 cups bean sprouts
- 2 tbsp. soya sauce
- 2 fried scrambled eggs
Danish Meatballs

Prepare and cook meatballs
- Dill Sauce:
- Cocktail meatballs
- ¼ cup margarine
- ¼ cup flour
- 2 cups chicken bouillon
- ¼ teaspoon salt
- 2 teaspoons dried dill weed
- 1 cup sour cream
Fantastic Fudge Brownies

Cream sugar, cocoa and butter
- Icing:
- 1 cup butter
- 2 cups sugar
- 4 heaping Tbsp. cocoa
- 4 eggs, beaten
- 1 cup flour
- 1 cup walnuts, chopped
- 1 tsp. vanilla
- 2 cups icing sugar
- 2 Tbsp. butter
- 2 Tbsp. cocoa
- 2 - 4 Tbsp. boiling water
- 2 tsp. vanilla
Spinach Salad

Wash and dry spinach leaves
- 1 bunch fresh spinach
- 1/2 sliced mushrooms
- 6 slices bacon
- 2/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp. white wine
- 2 tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 hard cooked eggs, chopped
Seafood Pizza Primavera

Preheat oven to 400 degrees
- 2 pkg. crescent rolls
- 1 cup sour cream
- ½ cup seafood sauce
- ½ lb. shrimp
- 200 gr. imitation crab
- 1 cup chopped broccoli
- ½ cup slice green onions
- ½ cup chopped green pepper
- ½ cup chopped red pepper
Curried Shrimp

Melt butter with curry, onion and ginger and cook until onion begins to soften
- 3 tbsp. butter
- 2 tsp. curry
- 1/4 cup onions, chopped
- 1/8 tsp. ginger
- 3 tbsp. flour
- 1 cup chicken broth
- 1 cup milk
- 3/4 tsp. salt
- 3/4 tsp. sugar
- 2 tsp. lemon juice
- prawns
Chicken Filling for Siljans

Mix all ingredients together
- 1 cup chopped chicken
- 1/2 cup mayo
- 1/2 cup grated cheddar
- 1/3 cup toasted chopped almonds
- 2 chopped green onions
- 1 tsp. curry powder
- pinch parsley
- pinch dill
Stewed Rhubarb

Place in large pot. Keep temperature low until melted
- 8 cups rhubarb
- 1/2 cup water
- 2 cups white sugar (or less)
