Coconut-Filled Lemon Cake

1) Beat the egg whites, cream of tartar, and salt in a large bowl till the mixture is soft and fluffy

- 2 large egg whites
- 1/4 teaspoon cream of tartar

1. To prepare the pâte fermentée, weigh or lightly spoon 4

- 1/2 cup warm water (100° to 110°)

- 3/4 cup warm water (100° to 110°)
- 1 teaspoon active dry yeast
- 9 ounces all-purpose flour (about 2 cups)
- 4 ounces bread flour (about 2/3 cup)
- 1 teaspoon salt

Orange Mousse

1. In a large saucepan heat milk over medium heat until bubbles form around the edge of the pan (do not boil)
- 3 1/2 cups skim milk
- 3 large eggs
- 3 egg whites
- 1 cup granulated sugar
- 2/3 cup cornstarch
- 1/2 cup orange juice (fresh is best)
- 1 tablespoon grated orange rind
- 1 tablespoon butter
- 4 teaspoons vanilla extract (use pure if possible)
- 2 cups lightly frozen whipped topping, non dairy, thawed or two cups whipped cream
- orange slices (to garnish)

1.Dissolve honey in the warm water in a large bowl, then sprinkle yeast over the top

- (1) 16oz Tub ricotta cheese Mixed with salt, pepper and 1 egg
- ½ cup fresh basil leaves

- 4 cups shredded mozzarella cheese
